Mashed Potatoes with Peas

I wanted to come up with something other than the same ol' mashed potato side dish for my Pork Chops with Mushrooms, Shallots, and White Wine Gravy. I had already done Creamy Mashed Purple Potatoes, which we loved, and Roasted Garlic Mashed Potatoes, my personal favorite! I even decided to give my favorite a twist and try some Roasted Garlic Mashed Potatoes and Cauliflower. Which, even as a non-cauliflower person, I found very good.

So, where do I go with my beloved mashed potatoes? I started thinking about my favorite veggies. I thought about mashed potatoes with carrots but just wasn't sure about that one (maybe down the line I will give it a whirl). I then turned to peas. We both love peas. I though hmmmmm, the sweetness of the peas would probably go very nicely with the creamy potatoes. Especially since I add Greek yogurt to make them creamy and that adds a nice sour cream like tang to the flavor.

I have to admit that Kevin thought the idea was pretty weird, and I guess he is kind of right. I tend to be game to try anything together at least once. Good example of that was my most recent kitchen fail. I wanted to make a healthier version of macaroni salad and ended up throwing way to much at it at one time. Mental note....change one thing at a time!!

I was so glad that Kevin liked this dish. It worked perfectly as a side dish for the pork chops, and was great with the mushroom gravy as well. I think this one is a real winner, especially if you are tring to get more veggies in your families diet.

Mashed Potatoes with Peas

2 pounds potatoes, washed, peeled, and chopped
1/2 stick of butter, cut into pieces
1 cup non-fat Greek yogurt (you can warm it in the microwave slightly)
1 cup frozen green peas, thawed
1/4 cup fresh chives, chopped
Salt and white pepper to taste

Boil the potatoes in a large pot of salted water until tender, about 15 minutes depending on the size of your potatoes. Return to the hot pot, and cook for an additional minute or so. Mash until smooth (for even creamier potatoes use a hand mixer). Add the butter and stir until melted. Then add the yogurt, peas, and chives. Combine, salt and pepper to taste.

  1. What an awesome idea, never thought to put peas in mashed potatoes. I always make corn and mix it in my mashed potatoes into a big pile :)

    1. Me too!! With butter and salt and pepper..yuummmmm!

  2. Haha glad someone else decided to put their peas with mashed potatoes!! I've been eating mashed potatoes like that ever since I was little. Everyone besides my family thinks it's weird, but I think the combination goes just as good together as pb&j!
