Although for me it was last Friday and there was a Christmas party on Saturday. YIKES!!
This whole season I have been so good. I did the majority of my shopping on Cyber Monday, have almost all of my presents wrapped, and the house is completely decorated. No last minute for me this year.
Oops, I need to make cookies!!
What to make? Think, think, think.
BING!! (That is the light bulb going off in my head)
I started digging through recipes....
A no bake cookie......PERFECT.
Plus it was a recipe for rum balls. Perfect for a work party right?
So I picked up the phone and called my son, the bartender.
Me - Hey baby I need some advice
Son - *yawn* (he works nights)
Me - Wake up
Son - I'm up, I'm up!
Me - OK I am making cookies for the party last minute.
Son - Why does that not surprise me?
Me - OK no heckling the cook here!
Son - OK, shoot.
Me - Well I was thinking about using your Aunts rum ball recipe, but that is kind of over done so maybe kicking it up with a spiced rum or some other liquor that would give it a more modern twist.
Son - Ya, you could use spiced rum. Would a blackberry whiskey taste good?
Me - Hhmmmm I don't think blackberry really screams Christmas do you?
Son - What about Fire Ball?
Me - Fire Ball?
Son - Ya, it is a whiskey that is spicy, like cinnamony. (Yes, I am not the only one in the family that invents words)
Me - PERFECT!!
Son - Save me some!!!
The Fire Ball added the perfect twist. Just a hint of cinnamon bite, but not too much.
These were a HUGE hit at the party, plus I had people order a few batches from me!!
Just an FYI though. The alcohol is not cooked out of the cookies, so keep them on the adult table only!!
12 ounce box of Vanilla Wafer Cookies
2 tablespoons baking cocoa
1 cup powdered sugar plus more for decoration
1/2 cup Fireball Whiskey
2 tablespoons white corn syrup
1 cup walnuts
Place the Vanilla Wafers in the food processor and pulse until you reach a course crumb texture. Pour the crumbs into a large bowl.
Heat the walnuts in a small skillet, over medium heat, tossing occasionally to keep them from burning. Toast for a few minutes. Your nose will tell you they are done when you smell that lovely nutty fragrance. Place them into the food processor and pulse until they are course crumbs. Transfer them to the bowl with the wafer crumbs.
Sift the cocoa with 1 cup powder sugar into the bowl with the wafer crumbs and walnuts. Combine thoroughly (I used my hands).
In a small bowl combine the whiskey and corn syrup. Stir until the syrup breaks down and it completely melted into the whiskey. Pour the liquid mixture over the dry mixture and combine with a wooden spoon. Allow mixture to sit for a few minutes.
Using a tablespoon, shape mixture into walnut sizes balls and roll them in the remaining sugar or leave them plain.
Chill for one hour. Store in an airtight container.
Makes 25 to 30 balls
