Mini Meatloaves with Balsamic Glaze {Mandarano's Glaze & Sauce Giveaway}



My decision to start blogging was mostly due to my kids pushing me into it, and when I say pushing I mean they had a bulldozer to my back and weren't taking no for an answer. They seemed to both agree that I was going to be absolutely fabulous and this would be a huge hit. I, on the other hand, did not share their certainty. I was shocked when I began getting hits on the blog. I kind of figured it would be family and friends and I would get the obligatory "Oh yes, it is a great blog honey we really enjoy it" or, in the case of my older relatives, "What the heck is a blog?". But then again I have never been a big risk taker. I have a huge fear of failure that will leave me not just running, but breaking the sound barrier to go the other way. I have been terrified to make mistakes and look like I don't know what I am doing. Then it struck me, of course I don't know what I am doing, I have never done this before! But with the encouragement of my family and friends I am learning that I don't have to be perfect, I just need to be me. My daughter even bought a shirt that says "My Mom's kind of a big deal on the internet"! Now I wouldn't go that far, but bless her heart for loving and believing in her Mom.



One of the great perks of being a food blogger, at least in my mind, is doing product reviews. You get to try all sorts of new things and write about them. I will call my family over if possible so we can all try it and then I have more opinions to work with. My kids have even begun to call me and ask me if we get to sample anything that week. This week the were very excited to hear what I was working with. The girls love balsamic and my son and Kevin love meatloaf, so the fact that they were both being put together made them all very happy and anxious. Did I say anxious? Let's change that to annoying. "Mom when are you making the meatloaves?" "I thought we were having the meatloaf tonight" "You did say you were making meatloaf right?" YES...sheesh. I do have a schedule I work with here people. But don't tell them that. It seems Burger King and I are supposed to have the same motto "We do it your way". Wait, I think Burger King has even dropped that. I need to renegotiate this whole thing!

Greek Shrimp in Foil Packets



With the weather FINALLY warming up here in Western Washington. I have been wanting to spend more time outdoor and not hiding in my kitchen. Let's face it, the summers here can be absolutely fabulous but they don't last very long. We are lucky if we get 2 months of weather above 70 degrees!

So of course that means more cooking on the grill. I have been craving Greek flavors for a while now. I thought about making my Big Fat Greek Burgers, or my Chicken Kabobs with Greek Salad, but on this night I decided to do something with the frozen shrimp I had bought on sale a few days earlier. After about grilling in foil packets in my last Food Network magazine, the little light bulb went off in my head and I knew exactly how I wanted to prepare the shrimp. 

Grilling in foil packets is so simple and tons of fun really. You just throw whatever flavors you want into the foil, crimp it up into a little package, and throw her on the grill. No mess, no turning or basting, just let it do its magic inside the packet and viola, a fabulous meal!

I don't have any pictures of the dish in the foil because my camera decided to have a mind of it's own when I tried. But at least I have a picture of the finished dish for you. My daughter was here, you know, Miss Picky Pants? She loved this, well except for the tomatoes. I did hear a "Why did you have to put tomatoes in it" whine. But she picked them out and chowed down.

Slow Cooker Sausage and Peppers Sandwiches for #SRC



For this month's Secret Recipe Club I was assigned Lynsey Lou's Making Your Days Delicious, and boy can I say that she does just that. From her BLT Biscuits to her Baked Burritos with Creamy Poblano Sauce to her Browned Butter Salted Caramel Cookie Bars, my mouth never stopped watering! I chose to work with her Crockpot Sausage and Peppers recipe because Kevin loves sausage, but it was not an easy decision to make, trust me! 

I knew I wanted to switch turkey sausage for regular sausage just to lighten it up a bit. Well OK let's be honest here, I wanted to make them into sandwiches add cheese so I figured if I reduced one side of the fat and calories I could boost up the other. It all balances out, right? At least I tell myself that. It is amazing how you can rationalize things in your head to make what you want seem logical! Seriously though, I love love loooooove sausage and pepper sandwiches so I had to do them this way.

There is a bit of a story behind this post though. It almost didn't happen. Why? Well #1 because I put it off until the last minute (shame on me). I had all month to do it and just waited until the last minute. I learned my lesson though. I had it in the slow cooker Thursday and figured I was fine, but on the way home from work Kevin got a phone all from a very dear friend of ours that recently lost her husband. She was in a bad place so he came home, into the fridge went the sausage and peppers, and off to her house we went. We took her out to dinner and it ended up being a very nice evening, but the sausage and peppers were haunting me. I was so afraid they would be ruined and then I had no idea what I would have done. I guess remake them today and realllllllllllllly push it to the last minute.

I took the cooker over to her house yesterday and put it on warm while we floated around her pool and enjoyed the fabulous weather we have been having here in Western Washington. When Kevin got there after work we were ready for dinner. I opened up the lid and both my friend and Kevin went on and on about how good it smelled. Awesome, one thing achieved. I get a roll and placed a couple pieces of cheese on it, topped that with a sausage and a ladle full of peppers, onions, and tomatoes, and all of those wonderful juices that had developed in the slow cooker. Wowza!!! They were so good!! The soft roll with the salty provolone cheese that was melting due to the heat of the sausage and peppers and the wonderfully flavorful sauce. They were perfect.

Slow Cooker Sausage and Peppers Sandwiches
based on a recipe from Lynsey Lou's Making Your Days Delicious 



2 Tablespoons olive oil
1 package Jennie-O's Italian turkey sausages (there were 5 in the pack)
2 large red bell peppers, sliced
2 onions, sliced
6 cloves garlic, minced
1 (15oz) Can crushed tomatoes
1 (15oz) Can fire roasted tomatoes
3/4 Cup dry white wine
1 Tbsp Italian seasoning
Salt and pepper, to taste
Deli sliced provolone cheese
Sandwich rolls

Heat olive oil in a large skillet over medium-high heat. Add the sausages and brown them on all sides. Remove to a paper towel.

Place the sliced peppers and onions in the slow cooker.. Top with the cooked sausage, crushed tomatoes, garlic, wine, Italian seasoning and salt and pepper. Turn cooker on low and cook for 6 hours.

Place 2 slices of cheese on sandwich roll and top with a sausage. Ladle the peppers, onions, and tomatoes on top of the sausage making sure to get the juices as well.

Friday Flashback 7/26/13



I don't know about where you are but here in Western Washington it has been perfect. Just the kind of summer we wait 9 to 10 months a year for! 

I have been spending time in my garden


 Watching the wildlife in my backyard



 and soaking up sun at my friends pool (don't you love the friend with a pool!). 

All of this is not very conducive to getting a lot of work done though and I admit I have slacked off in my duties as a food blogger. OK well it isn't all my fault. When you have people showing up and dragging you off to this and that get together or party (I know your heart bleeds for me right hehehe) it is soooo hard to focus on work. But I was able to get a bit of cooking done and a lot of recipe writing so there will be a lot going on in the kitchen in the coming couple of weeks. I have a burger in the works that the whole family is excited to try, as well as a seafood recipe, and a pasta. 

But let's look back at a couple tasty things that happened this week in my kitchen.

Apple Cider, Rosemary, and Garlic Brined Chicken with Purdy Organics {Product Review}



There is a local company that has just begun to really take off, Purdy Organics, and they have some really wonderful products. I have a Pickled Beet Salad with Walnuts and Feta that uses their pickled beets (YUM) and I have been really wanting to try some more of their yummy treats. Sis, the owner, gave me some spicy red oinions, spicy asparagus, dill onions, dill carrots, spicy garlic cloves, and apple cider vinegar with rosemary and garlic. 



Of course at first I had so many ideas running through my head I think a bit of steam came out of my ears! But I decided to focus in on the vinegar. I loved the idea of the rosemary and garlic infused into it. Now don't ask me why, because I have never brined anything, I decided to brine a chicken, and once I made the decision I actually got really reallllllllly excited about it (hey it doesn't take much with me I know). I got online and began researching brine recipes. Can I tell you that I found recipes that had some pretty wacky stuff in them, in my humble opinion, but I settled in to do a basic brine with my twist.

The first night I made the chicken my oven decided to go a little wacky (gotta love electric ovens....NOT) so the bird was too dark on top and then lighter on the bottom, definitely not a picture worthy bird. However, Kevin and I both ate the chicken like we had been stranded on a dessert island with no food for a month! Then my son stopped by and I fed him. He had one plate and asked if he could have more. So the chicken ended up gone. 3 people demolished it. Oh we had Garlicky Green Beans with it and those went bye bye too!

Even though I was upset the chicken wasn't pretty enough for a picture, I was secretly excited because I knew that meant I was going to make it again real soon. So less than a week later there was another bird brining away in my fridge. I was a happy girl.

This brine is so easy and makes for one amazingly moist and flavorful chicken. In the past I had read so many conflicting opinions about brining that I just decided not to even give it a try. I had roasted many a successful chicken and turkey with no brine so I figured why rock the boat. If it ain't broke don't fix it right? WRONG!! Now I will be hard pressed to ever make a bird without brine again!

Kitchen Sink Macaroni Salad



I grew up loving macaroni salad and that still hasn't changed. We usually have it a couple times a month, especially in the summertime. Then I started really getting into using Greek yogurt in place of sour cream and read that you can also use it in place of mayo. THEN I checked the calorie difference between non fat Greek yogurt and mayo. Ooohhhh Emmmm Geeeeeee I about fell over! According to Fatsecret.com there are 394 calories in 1/4 cup of regular mayo....it's OK, I will wait for you to get back up off the ground. There is 147 calories in a 1/4 cup of light mayo, and there is 35 calories in the same amount of non fat Greek yogurt. WOW right? I mean is seems to be a no brainer. So I started subbing Greek yogurt for everything.

When I first tried this recipe I used only Greek yogurt. It was OK but I really felt like it needed something. So back to the drawing board I went. I tinkered with a few things and this is what I came up with. The kids are the ones that named it "Kitchen Sink Macaroni Salad" because they said I added everything but the kitchen sink. I just knew I wanted a macaroni salad but I wanted to feel like it was more salad so in everything went!

Also, this makes a ton of salad so if you aren't serving a large group feel free to cut it in half.

Friday Flashback



I don't know about you, but I love love love it when the sun shines. I guess it is mostly because of the fact that I am a So Cal girl transplanted to Western Washington and go through some serious withdrawal several months out of the year. I do have to admit, after 7 years, I have learned to love the beauty this state has to offer which makes the sacrifice much more worth it.

I mean how can you not love this?



But this week, like most of the country, we have been in the grips of a heatwave. Most people have been absolutely miserable dealing with near 90 degree weather when the usual forecast is somewhere in the 70's. I however have been so excited. The only issue has been that we have no AC. I mean it just isn't necessary here. OK well it is not usually necessary here. 

As luck would have it though, one of my good friends just moved into a home with a pool a little over a month ago. So you know I have all but moved in! In exchange for my 24 hour pool pass I have been whipping up a few tasty treats for her. Over the last few days we have nibbled on...

And of course no great pool party is never complete without a little libation so I whipped up a pitcher (or three) of this refreshing Raspberry Lemonade.



It was a relaxing week of good food, good drinks, and good people, but now I need to get my rear in gear and get some work done!! I am super excited to give you a quick peek of what will be coming up on the blog very soon. 

Next Monday is another Secret Recipe Club post. I always love those!

Pacific Foods Organic Baked and Refried Beans {Product Review}



When I was approached by Pacific Foods to do a review for their new Organic Baked and Refried Beans I didn't even have to think twice about it. For one DUH I am the Mexican food freak, and for two I love finding new healthier alternatives to the old standby foods we have used for years. I loved the fact that they have simple, organic, non-GMO ingredients, and are packaged in BPA-free Tetra Recart cartons. Take care of your body and the planet. That is a good two for one in my book! They believe in the simple way of doing things and have for 25 years. If you make good food using simple quality ingredients, how can you go wrong? OK now on to the food right? The first thing I grabbed once I got my box open was of course *drum roll please* the Organic Refried Pinto Beans

I haven't had a can of beans in my house since the kids moved away, about 6 months ago. All of my life I have been a Rosarita Refried Beans girl. My Dad loved them and I passed that love down to my kids. One of our favorite breakfast dishes is beans and eggs. You heat up the refried beans and put a little bit in the middle of the plate, top with some shredded cheese, fry a couple of eggs and plop those on top of everything. A little drizzle of some Mexican hot sauce and a couple of tortillas and BAM you have yourself a darn tasty breakfast! 

Now you know I have said this before, the main things that makes me crazy about canned and boxed foods are the fat and sodium contents. They are usually through the roof! If you compare the Rosarita vegetarian beans with the Pacific Food Organic Vegetarian Refried Beans you will see that the fat levels are pretty close, so that is a good thing right? Sure but let's look at my favorite hiding place, sodium. Rosarita beans have a whopping 540mg!!! Pacific Foods has 360mg plus more protein per serving. 

OK OK I hear ya, even if they are healthier than the major brand it doesn't matter if they just don't taste good, and I have to admit I was worried that my years and years of eating (and being slightly addicted to) my favorite canned beans would leave me less than pleased with an alternative. Nope, not the case. If anything I felt like there was more flavor. The beans didn't seem as heavy and "gloopy". They actually tasted like beans! No water needed to thin them out, just heat them up and in your tummy they go.

So last night we decided to BBQ. We had a couple big ol' ribeyes, macaroni salad, and we decided it was the perfect time to give the Organic Baked Beans with Pork a try.

  • Organic Navy Beans
  • Organic Onion
  • Organic Brown Sugar
  • Organic Tomato Paste
  • Organic Cane Sugar
  • Organic Rice Flour
  • Organic Apple Cider Vinegar
  • Organic Roasted Pork

Now you have to understand that, just as attached as I was to my good ol' Rosarita beans, Kevin is VERY attached to his Busch's Baked Beans. I am actually surprised that he didn't complain when I made baked beans from scratch. He just loves those beans so it has been a no brainer for me, if he wants baked beans, we get Busch's. 

I gave the box to him and let him take control. It took him a minute, but once he figured out how to open it he thought the packaging was pretty cool. He liked how fresh the beans looked and smelled. Then he turned the stove top to low and went about grilling the steaks. Once we sat down with our steaks and beans I tried not to be obvious about watching his reaction, but dang it I wanted to know! He took one bite.....then another. Then I hear "Hmmm these are pretty good" then more eating, "Wow I honestly didn't expect to like these" TADA a winner!! Just as I was really prepared to hang on to my old standby he was too, and we were both more than pleasantly surprised. You get all of the terrific flavors you expect from the old name brands, they are better for you, and even the packaging is more efficient for storage space and better for the environment. That my friends is a win all the way across the board!!

Sloppy Joses with Avocado Cream



You know my love for Mexican flavors. I try to sneak them into just about everything I can. When you have a "non believer" in your midst (doesn't believe Mexican food is God's gift of flavors) you will go to every extreme to not only satisfy your need for those flavors, but to prove them wrong as well (I love doing that!).

This meal came about because I was trying to come up with something that was kind of an American classic. I mean how many sloppy Joes did you eat growing up. I loved them! When I knew Mom was making sloppy Joes for dinner I made sure my friends went home early so Mom wouldn't be tempted to invite them for dinner. That way I didn't have to share. WOW kind of rude huh? Oh well, when you are 9 years old it doesn't seem that way.

Anyway, I know that I can usually sneak in the flavors I love when I begin with a dish that is an old stand by. He really didn't even realize what I was doing until the plate was already in front of him.

Kevin - What is this? A sloppy Joe?
Me - mmhmmm uh yup
Kevin - Why is there avocado on my sloppy Joe?
Me - What? *taking a bite* mmmmm
Kevin - *lifting bun* there is avocado on here
Me - Oh ya, that, well ummm these are sloppy Joses
Kevin - Sloppy whats?
Me - Oh my Lord....it is a Sloppy Jose, Sloppy Joes Mexican cousin!
Kevin - I knew you were going to make Mexican food
Me - *sigh* just eat!!

A few minutes later....

Kevin - I really like these the spice is just right
Me - Thank you (DUH!!)

He will never learn will he?

Last Week's Craziness!

This last week has been a crazy one for me! To start with, last Tuesday I was going through my normal routine of gardening, cleaning, etc before I sit down to begin my blogging duties. I decided to grab a quick bite before I got started so I cut open an avocado and gave it a bit of salt, grabbed a spoon and sat down to watch a bit of food tv while I ate. Once I was finished I continued to watch tv for just a bit to make myself drink the whole glass of water (I am awful about water intake!). That was when I felt my eyes beginning to swell and itch, something I am used to this year because my allergies have been horrid. Then the sneezing began, so I grabbed a couple of Benadryl and was waiting for a bit of relief so I could get to work. Nope, instead of relief, the swelling in my face continued until I could barely open my eyes. My nasal passsages became so swollen I felt like I had to sneeze, but couldn't. I still was thinking it was just a "regular" allergy attack just on a bigger scale when I felt my throat begin to itch and my tongue tingle. OK I am thinking, these are new, maybe it is from the Benadryl, that is until my throat and tongue began to swell shut.

Not sure of what to do since this is the first time I have ever experienced anything like this, I try calling my kids...no one answers. Seriously, I dialed 4 numbers and got no one, and Kevin was at a friends house where he had no cell connection. Now I am panicked. I briefly thought about driving myself but put the thought out of my head because I knew I didn't belong behind the wheel of a car, so I called 911. As the operator came on and asked what my emergency was, I realized that I could barely speak. She had to ask me more than once to repeat myself. Finally, with all of my information given to the best of my abilities, the ambulance was dispatched.

Now you have to realize that my town is so small I could just about hear the sirens as soon as they left the fire station, which was a bit comforting, until I realized they couldn't find my house and I heard them drive past twice. So I pick up the phone and call the emergency operator again. I finally successfully explain to her where I live and no sooner did I hang up than the paramedics were at my door. After a blur of questions, pokes, stabs, etc. I am being wheeled out and down my driveway. Into the ambulance I went and off to the hospital I was rushed. Part of me felt like I was making a big deal out of the situation and really didn't need to call 911, but any part of me that was feeling that way stopped as soon as I was in the ER and the Dr explained to me how dangerous my situation was and how glad she was that I called. OK so maybe I am not a big baby after all.

End of story, after staying overnight in the hospital to be monitored, I was sent home with an "Epi pen" and instructions to inject myself with it if I feel my eyes swelling and the sneezing begin like they did. What caused it you might ask? Well that is the million dollar question. They don't know. It could have been one of several things or even a combination of a few. I am going to go for some testing to hopefully find out, but until then Kevin won't let me touch much of anything, the garden is off limits, and he insists on washing all of my fruits and vegetable violently before I am even allowed in the kitchen. Of course the remaining avocados were thrown away and he makes sure to steer me well around them at the grocery store.

Dang, I really hope I am not allergic to avocados. I love those little green buggers!!

Garlicky Green Beans



I love love love the summertime! Not just for the weather, but the fresh veggies and fruit that are available. I walk into the produce department and I am like a kid in a candy store! I even dream about them sometimes (ya, I know I am weird)! 

On this trip to the store they had just brought in a fresh shipment of these beautiful green beans. I made a bee line to them, leaving Kevin with the cart wondering where I was running off to. I came back with my bag of the little green beauties with a smile on my face. WOW I am easily amused aren't I?

I was going to do a salad with them like the Warm Potato Salad with Green Beans I did a couple of months ago. But I settled on a family favorite. We love garlic and we love green beans so it only made sense to put them together, a LOT of them together. 

I made this with a Rosemary, Garlic, and Vinegar Brined Chicken (I will be posting the recipe for that soon) and my son happened to come over right after dinner. Funny how that works right? He went straight to the kitchen and made a plate. He kept going on and on about the green beans (and the chicken) and how he needs to have his girlfriend come learn how to cook from me. So needless to say there were no leftover beans (and very little chicken).

When I used to make this for the family I would use 2 pounds of beans, but now that it is just the two of us I used 1 pound. 1 pound would be OK if you have 4 small eaters, but if your family is anything like my family you will need those two pounds easily!!
