Naanchos for Crunchy Goodness #SundaySupper



When I found out this weeks theme for Sunday Supper was "Crunchy Goodness" I immediately knew what I wanted to make.

Have you ever seen The Great Food Truck Race with Tyler Florence on Food Network? Well if you haven't you should. But aside from that, there is a food truck on the show called Tikka Tikka Taco (you can follow their Facebook page here). One of the dishes they have made several time this season is "Naanchos". I was intrigued by the dish from the moment I heard it's name. Not only have I been wanting to try my hand at Indian food, but I love trying to figure dishes out.

Friday Flashback 9/27/13



Happy Friday everyone! This week has been all about welcoming in the fall season for me. The leaves are turning and there is a chill in the air.

I have had a fire burning in my fireplace for last few days. Which makes me uber happy because I love the fireplace smell. I know, weird right?

I dug into my candle stash and have already used up all of my pumpkin spice candles, so those are on my must buy list.

And the best of all is

the deer are back in my yard!!!

Thai Ribs



This was one of the nights that Kevin was spared from my Mexican food obsession, and trust me he was very happy about that. 

Kevin - What's for dinner? Like I need to ask.
Me - What is that supposed to mean?
Kevin - *the look*
Me - And what was that look for?
Kevin - Well let me ask this....am I going to use salsa, sour cream, or guacamole on it?
Me - Ha ha ha you are funny (he had a point but I am not going to let him know).
Kevin - Well?
Me - As a matter of fact, NO you will not need salsa, sour cream, or guacamole tonight.
Kevin - Seriously? Are you teasing me now? *smirk*
Me - *eyeroll*

Quick and Easy Red Beans and Rice




Do you have a wish list of places you would like to visit? That was a silly question right? We all have places we would love to go. 

One of the places that I am dying to visit is New Orleans. I have wanted to go their since I was young. One of my friends went during Mardi Gras and had the best time. But I don't even know if I would want to go during Mardi Gas really. I am out of the "party mode". 

Now I would love to go for the food and surroundings.

Slow Cooker Campfire Stew




Do you have trouble remembering things? Where you put your shopping list, your keys......the kids? No, I am not saying I have ever lost my kids

Well there was that one time in the mall. I really didn't forget where they were I......OK I forgot where they were. And there was that one time that I forgot what their names were, but I figured it out. 

No worries though, they are both healthy well adjusted young adults now, so I obviously wasn't that bad. 

But I was young. It gets worse with age.

My Dad always said he suffered from CRS "Can't Rememer Stuff" and I know he passed it on to me, thanks Dad.

Cowboy Casserole



Do you find that you sometimes get stuck in a food rut or, 

as I would rather call it, 

a food cycle? 

I seem to get one type of food in my head, and my taste buds, and keep craving it, or variations of it, for what seems like forever. Right now I have been a on a beef kick, which is very rare for me. I am more of a fish and chicken girl, much to Kevin's dismay. But on this night I craved the Sloppy Joes from my childhood (yes, the kind in a can). But you know I try so hard to stay away from prepackaged and canned foods, so I came up with  Homemade Sloppy Joes

Unfortunately that didn't seem to satisfy my beef tooth, so I had to crank my brain into high gear and figure out something else to do with beef, other than just a pasta dish with tomato sauce. I knew I had some zucchini and summer squash, so I figured I would run with those.

Well not literally run. 

That would look funny. 

OK now I have that image in my head and it is cracking me up.

I knew nothing about Hot Logic when they approached me and asked me if I would be willing to review their product. Macrowave oven? What is that? I had no idea what to expect, but I was excited to give it a try!

Black Bean Salad with Tomato, Avocado, and Serrano Lime Vinaigrette



OK, I will admit, this is not the prettiest dish in the world. But hey, beauty is in the eye of the beholder right? Ya, that sounds good, but it is still ugly.

Well, I wasn't exactly thinking about the presentation when I came up with the dish. Sometimes, as a food blogger, you will get an idea in your head for a gorgeous dish. Then there are the other times, when you just think about tons of yummy flavors that would go well together. Then you just tend to jump in willy nilly (did I really just say willy nilly?) tossing things together to achieve the flavors you desire.

This. my friends. was exactly one of those moments.

Holding My Family Just a Bit Closer Today



I can still remember my son waking me screaming "Mom the plane hit the building!!" I rubbed my eyes and told him it was just a TV show. "No Mom, the reporter said that it was the World Trade Building". I still didn't believe him, but I got out of bed and went to the kitchen to get a cup of coffee.

My ex-husband had not left for work yet so we were all sitting in the living room watching the TV, and trying to understand what was going on when the second plane hit. We all stared in silence, it was still hard to wrap your mind around what was going on. Finally my daughter, who was only 9 at the time, turned and asked me, "Mommy why did the airplanes crash into those buildings?". At that moment my ex-husband and I looked at each other for an answer to her question, but we really had none. I still couldn't believe it was real.

Deviled Potato Salad



So I had my sudden craving attack for Sloppy Joes the other night, and made a beeline to my kitchen and pantry to make sure I had everything I needed for the sandwiches. I was so excited when I realized that I had everything I needed already I did the happy foodie dance. Which is kind of my version of an end zone dance, and I have been known to do it in public. Restaurants, grocery stores, produce markets. Ya it is bad, and I am pretty sure a few people that have been subjected to it are now in need of therapy. At least that is what my kids have led me to believe.

Homemade Sloppy Joes



I don't know about you, but Sloppy Joes bring me back to my childhood. I remember playing outside with my friends and then hearing my Mom calling that dinner was ready. I was not always the quickest to respond to that call, but when I knew it was Sloppy Joes she only had to say it once! Something about that soft bun with a tons of tomatoey (is that even a word?) beef piled on it. WOW soooo good. I think the whole "sloppy" part of it is huge for most kids too. I mean what other time could you make such a mess eating your supper and NOT get into trouble?

T-fal Stainless Steal and Non-Stick Cookware Review



I know there has been quite the buzz going on all around the internet about this awesome giveaway from CookingPlanit and T-fal.  CookingPlanit and T-fal have teamed up with 50 bloggers to give you all a chance to win this awesome 12 piece set of cookware!

So let me tell you a little bit about it all.

I can't tell you how excited I was to find this box on my doorstep?


 I was so giddy when I was asked to participate in this giveaway. First because it was an honor to be chosen among 49 of my favorite bloggers, and second because I was going to get to try this fabulous 12 piece cookware set from T-fal! 

I had a ratty old set of pots and pans that I bought quite some time ago. You know how it goes....I will replace them.....someday, and someday just doesn't seem to come. But then the foodie fairy smiles on you and you find this fabulous set of stainless steel and non-stick cookware on your kitchen table! It could happen to you...TRUST ME!


Look at how gorgeous this set is. I felt like a little kid when I laid them all out. They were so shiny and brand new!! 


But it isn't all about looks with this cookware gang. They have tons of great features!


The non stick surface is like none I have ever owned before. Plus, one of the coolest things, in my opinion, is the Thermo-Spot™ heat indicator shows when your pan is perfectly preheated. No more guessing if it is at the right temperature. You know with just a glance. 


One of my favorite features of the stainless steel pots is that the handles are riveted, not held with screws. How many times have you had handles get wobbly and loose because of the screws? Not anymore, they are soundly secured to the pot. They also have Interior measuring marks which is such a nice convenience.

All of the cookware can go from stove top to oven, as you will see with the following recipe as well as these Pork Chops with Red Pepper Sauce. The non-stick up to 450 degrees, stainless up to 500, and all of the cookware is dishwasher safe.

All in all I am absolutely tickles pink with this cookware, and I know you will be too!! Just take a look at this Tomato Bacon Frittata I made using it. I have always been afraid to try a firttata for the simple reason that I knew it would stick to the pan. Not with these T-fal pans. I simply ran my rubber spatula around the rim and slid it right out!!

Mexican Pizza and Corn on the Cob with Cayenne Parmesan Butter {CookingPlanit.com Review}

A few weeks back, when CookingPlanit approached me to participate in their promotion and giveaway I had no idea what CookingPlanit really was. I immediately jumped on their site to check it out. I was interested in the idea of being able to search for an entire menu rather than piecing dishes together from here and there. I was also intrigued by the idea of the step by step intructions to make sure your dishes were all finished at the same time. That is one of my weaknesses when it comes to cooking. Just ask Kevin. Between poor planning, and having to take 50 million pictures of a dish before I serve it, he is pretty used to eating food that is, well, less than hot shall we say?

I spent quite some time browsing through the site before I could choose just one meal. I found so many I wanted to make! I love the fact that you can browse by the chef recommended or top rated dishes or you can search by key word. I experimented putting in things like fish, soup, pasta, easy, and finally my favorite, Mexican.


Then I browsed through all of the results until one jumped out at me. The "Tortilla Night" meal sounded so good. Personal Mexican Pizzas with Corn on the Cob with Cayenne Parmesan Butter? Yes please!!


I reallllllllly loved the add to groceries function because you just click on it and it is saved for you. If you have the app for your iPhone or iPad you can just take them to the store, open up the program, and BINGO there is your shopping list! If not, you can print the list or even email it to yourself or someone else.

So once I had all of my groceries ready and the kids came over, my daughter and I grabbed my computer and were off to the kitchen to cook. I let her be in charge of the process. She went to CookingPlanit.com and signed in to my free account. Clicked on "Bobbi's Planit" at the top left of the screen and found the meal that was saved when I added it to my grocery list. Once she pulled the page up she clicked on Prep & Cook , chose the number of people that were eating, and away we went.


It shows you when your meal will be done and then walks you through the process step by step. My daughter was a little bit nervous about being in charge, but once we got started she loved it. The result was a fantastic meal that was ready to go all at once!! I can't wait to choose my next meal!
