Cheesy Tomato Casserole - A delicious, cheesy, meatless Monday meal, the whole family is sure to love!

When I found out this week's Sunday Supper theme was "Meatless Meals" I thought for sure I would have to sit this one out.

I mean, I cook for two and one of them is a major carnivore!

I might as well say I am going to chain him to the wall and starve him.


The idea totally freaks him out!

I know

Sssshhhhh you never heard me say that!

So I put on my thinking cap.


Aha, I came up with it!

He has been asking me to make meatloaf for quite some time, but I have been on a bit of a fish and chicken kick.

So I knew I could tempt him with meat, red meat, and sneak the real dish I was working on in for a side.

But enough about my devious ways. Let's talk about this dish.

Oh ya, he went back for seconds.


Just think a nice creamy mac and cheese meets subtle Italian flavors.

You got it


So break this meal out for a meatless night, or sneak it in on your carnivore as a side dish.

Either way you won't be sorry you did!

Cheesy Tomato Casserole 

8 ounces large shell pasta
3 tablespoons butter
2 cloves garlic, minced
3 tablespoons all-purpose flour
2 cups fat free evaporated milk, warmed
2 cups mozzarella cheese, grated
1/2 cup Parmesan cheese, grated
1 tablespoon olive oil, plus more for drizzling
1 medium onion, chopped
1 15-ounce can diced fire roasted tomatoes
1 teaspoon dried oregano, crushed
1 teaspoon dried basil, crushed
1/4 cup non fat Greek yogurt
1/4 packed cup flat leaf parsley, chopped
Salt and pepper
1/4 cup seasoned bread crumbs

Preheat oven to 350 degrees F.
In a large pot, boil the pasta according to package directions for al dente. Drain and reserve.

In a medium pot, over medium heat, melt the butter. Once the butter has melted add the garlic. Stir and cook for a minute. Then whisk in the flour and cook, stirring constantly, until mixture has a nutty aroma, about 4 minutes.

Whisking constantly, slowly add the warmed milk. Cook, continuing to whisk along the bottom of the pan until boiling, about 5 minutes. Remove from the heat and stir in the cheese, one cup at a time, stirring constantly until completely melted. Set aside.

In a large skillet, heat the olive oil over medium-high heat. Add the onion and cook until translucent, about 5 minutes. Pour in the tomatoes with the juice, cook until warmed through. Stir in the Greek yogurt, oregano, parsley, salt and pepper. Add the macaroni and cheese and stir until thoroughly combined

Pour mixture into a casserole dish and top with the bread crumbs. Drizzle with olive oil and bake for 30 minutes.

Serves 6

  12. OMG what is it with the carnivore husbands? If I served this by itself my husband would look at the table and ask me where is the rest of the meal. So I'll cook a piece of chicken for him and I'll make a meal off this lovely pasta dish.

    1. Yes, I always get the look over my shoulder while I am cooking and the the "Where's the meat" comment. I hope you do give it a try :)

  14. Bobby, great dish. Fire roasted tomatoes with mac and cheese, what an amazing idea!! I have quite the drama going on at my house where I have not one but three devoted carnivores. And feeding them anything that is meatless is a nightmare. This would be a hit I know.

    1. Those dang carnivores....what are we going to do with them??

  15. OH I would totally take a big bowl of this for lunch or dinner any day. Luckily I have my hubby on board with all my crazy meatless meals, no meatloaf bribing necessary.
