Garlicky Kale with Beans and Bacon



Do you ever go shopping just to cruise the isles and see what you can find? I know that can be a bit dangerous for the ol' pocketbook, but sometimes I just have to do it. 

It is kind of like a big game of hide and seek. Dinner is hiding somewhere in the store, and I have to find it. Unfortunately I can get a little ADD, especially in the produce section.

Ohh look at the pretty fresh berries. Wait, is that asparagus? WOW that corn on the cob looks awesome....

This can go on forever, and is why Kevin hates to go shopping with me. But hey, sometimes it is just the kick I need to come up with new ideas for dishes when the noggin seems to be in a stall pattern.

I think it would be fun to have a bunch of friends go to the store together, everyone going their own separate ways. Each person gets to pick one item that has to be used in a dish. Kind of like Chopped, the home version. Then head home and get to cooking. Seriously, how much fun would that be?

Oops see, ADD at it's finest.

Anyway, on this particular day we actually had sunshine here in Western Washington, so I knew that grilling would be the plan for dinner. 

I wanted something different for a side. 

I usually go to the typical side when we grill.

You know, potato salad, macaroni salad, coleslaw, BBQ beans? But for some reason, on this day, I was really craving greens. 

Now, I can get away with healthier dishes most any time. We both know that we need to watch what we eat. I mean, I have to balance out my mac and cheese addiction with something right?

But when it comes to grilling/BBQing, well let's just say that the healthy bug hasn't bitten very hard in that area. So I really wasn't sure how Kevin would react when he found out what I was going to make.

Fast forward to the check out line as he looks down into the basket and spies the kale.

What's that?
What's what?
That bag of green lettucey looking stuff.
Oh, it's kale.
For what?
Uumm to eat?
*insert annoyed look here*
OK, I am making some sauteed kale for a side to go with the steaks.
Kale?
Don't worry, I'll put bacon in it.
Oh, OK!

Bacon, it gets them every time!!



Garlicky Kale with Beans and Bacon  


1 tablespoon olive oil
4 slices of thick cut bacon, chopped
4 garlic cloves, thinly sliced
1/4 to 1/2 teaspoon dried crushed red pepper
1 pound kale, washed and cut into 1-inch strips
1 cup chicken stock
1 19-ounce can cannellini (white kidney beans), rinsed, drained
1 tablespoon red wine vinegar


Heat olive oil in a large skillet over medium-high heat. Cook the bacon until it renders the fat and begins to crisp. Remove with a slotted spoon to a paper towel lined plate to drain. Add garlic and crushed pepper and cook for 1 minute. Add greens by handfuls and stir just until beginning to wilt before adding more, toss with tongs to coat with the bacon fat.

Raise to high heat and add the chicken stock. Cover and cook for 5 minutes. Remove the cover and add beans. Continue to cook uncovered until beans are heated through and liquid is almost absorbed. Stir in the red wine vinegar. Season with salt and pepper and top with the crisp bacon.

Serves 4 to 6
