Sweet and Spicy Asian Style Chicken Thighs



I know I have gone on and on.....and on about how much I love Mexican food, but lately I have been on more of an Asian flavor kick.

We have done curry, teriyaki, etc. 

I have really been having a blast working with different ingredients trying to come up with special flavors that will tantalize our taste buds, and Kevin hasn't complained once! I wish I could get him to love Mexican food as much as he does Asian.

I think he just complains to give me a hard time.

Seriously!


How can you not like Mexican food?

Burritos, tacos, quesadillas, it is all yummy right? 

Maybe it is just me? Do you love Mexican food too? 

Anyway, back to the Asian flavors.

On this night I really wanted something sweet, yet spicy, sticky, and just plain GOOD!

I also wanted to grill them but our grill is currently broken *heavy sigh* so I did something Kevin hates me to do.

I pulled out my cast iron grill pan.

Why does he hate it you ask?

Well it seems that, at least in his opinion, I do not clean cast iron correctly. Therefor it is up to him to do all cleaning of cast iron.

Hey, it was his idea not mine!

But I did it anyway because I wanted those awesome grill marks on my chicken, along with some nice charred goodness (plus I like to annoy him from time to time).

I should be careful what I wish for though. I ended up with a bit more "char" on a few thighs than I planned on.

I realized why Kevin is not only in charge of the cleaning of cast iron, but in charge of the grilling of the meat!

Aside from my grilling issues, these chicken thighs were soooo good. With a bit of rice and a green salad, it was the perfect dinner and really hit the spot.

I took it easy on the Sriracha for you guys. 

But if you are like us, I would double it!

Mmmmmm my taste buds are tingling just thinking about it.

Anyone want to volunteer to grill for me? I promise I wont make you clean any cast iron!!


Sweet and Spicy Asian Style Chicken Thighs  

2/3 cup soy sauce
3 tablespoons hoison sauce
2 cloves garlic, minced
2 to 3 teaspoons Sriracha sauce (depending on the heat level you want)
2 tablespoon honey
8 chicken thighs


In a small bowl, mix together the soy sauce, hoison, garlic, Sriracha, and honey. Place the chicken in a zip top bag and pour half of the sauce over it. Make sure each piece is coasted in sauce and allow to marinate for 30 minutes to an hour on the kitchen counter.

Heat a grill to medium-high. Remove chicken from the bag and discard any of the marinade. Grill chicken for approx 5 to 7 minutes per side depending on the size of the chicken thighs.

Remove from the heat and brush with the remaining sauce.

Serve with white rice and a salad.

Serves 4
