Rosemary and Lemon Chicken Thighs with Asparagus for an AmFam #ChooseDreams #SundaySupper



This week Sunday Supper and American Family Insurance are teaming up to encourage everyone to get out their gardening gloves and hand shovels, and get excited about growing their own herbs and vegetables, and eating healthier.

4 years ago I started doing just that. I became a food blogger. I wanted to write recipes and have people enjoy them in their own kitchens. I wanted people to take inspiration from my journey through obesity and get into the kitchen to discover new ways to make old favorites that their family would not only eat, but love.

I wanted to show people someone that used to run away from vegetables and who, if did eat them, got them from a can, getting into a garden and growing fresh veggies and herbs. The difference is amazing!




Then the strangest thing happened. My kids got excited! The ones that used to turn their noses up to just about any kind of vegetable, started coming into the garden with me. They got excited watching everything grow, taking pictures and sharing them with their friends! When they saw me bringing squash or peas from the garden they hovered in the kitchen to see how I was going to prepare them, and gobbled them up like it was their last meal.

I was seriously shocked. I mean jaw on the floor flabbergasted! Who knew that simply growing our own food would excite them so much, and make them want to eat it? Now they beg me to make Turkey Sausage Zucchini Boats, Sautéed Cod with Garlic and Tomatoes, and Kitchen Sink Macaroni Salad.
The beauty of growing fresh veggies and herbs is that you don’t have to have a ton of space. I now grow all of mine in pots and the result is just as good. You can start out with a few small pots of herbs, and before you know it you will be growing fresh tomatoes, peppers, squash, and whatever else your heart desires!

This is a great recipe for using your fresh rosemary, one of my favorite herbs, and garlic. I love chicken thighs because they are inexpensive and add a ton of flavor to any dish. It is so simple, but so good. Plus the satisfaction of making a meal with something you grew with your own hands will make it seem even better!

Rosemary and Lemon Chicken Thighs with Asparagus  


8 bone in, skin on chicken thighs
3/4 cup extra-virgin olive oil
1/2 cup fresh rosemary leaves
1 lemon, juiced
1 lemon, sliced
12 cloves garlic, chopped
Kosher salt
Freshly ground black pepper
2 pounds asparagus, tough ends trimmed (can use fresh green beans)


In a large zip top bag, combine the oil, rosemary, lemon juice, lemon slices, garlic, salt and pepper in bowl. Add the chicken thighs and marinate for 1 hour.

Heat oven to 425 degrees F.

Lay the asparagus spears in a 9" x 13" baking dish and arrange the chicken thighs on top. Pour the remaining marinade on top. Roast until cooked through, 30–40 minutes.

Serves 4

  19. I don't mess around Bobbi! I made this for dinner last night with my parmesan and basil rice and it was AWESOME, my picky daughter ate almost all of it and my 11 mth old had thirds! Thanks for the great new dish! Oh and it made my house smell amazing!
