Eggplant Parmesan for the Cooking Planit #FormaggioChallenge



Remember last week when I told you about my collaboration with CookingPlanit and Formaggio Cheese?

You all took the time to vote on what cheesalicious recipe you wanted me to prepare from CookingPlanit using some of the awesome Formaggio Cheese products I received to review.




After the vote, the hands down winner was Eggplant Parmesan!!

I was so excited because I have been wanting to make Eggplant Parmesan for a long time now, but honestly thought it would be a difficult task.



Well, with the CookingPlanit app it took all of those worries right out of the game.

I loved working with the cheeses that Formaggio provided us with. We have enjoyed enjoyed burgers made with the smoked mozzarella cheese, salad made with the "Just add Lettuce", flat bread made with the fresh mozzarella, and of course this fabulous Eggplant Parmesan.

I will be honest. I fell in love with the cheese! I love the quality of it. All of their cheeses are made with the freshest ingredients, and hand made. No machines used here folks! The fresh mozzarella was my favorite, and I actually ate about half of a package by myself! I can't wait to try some of their other products. They have a hickory smoked mozzarella that is calling my name!
