Garlic Scape Pesto Crostini

Don't know what a garlic scape is? OhhhEmmmGeeee you need to find some, and then make this dish ASAP! I mean NOW, go find some! Wait, read this post first, then you can go find some!



So you all listened to me go on and on about how flippin' awesome I think garlic scapes are. I found those little beauties at the Pike's Place Market in Seattle and there was a love match made that will never end. One of the first things I did was make some awesome Garlic Scape Pesto. Beside being fabulous roasted, and in salads, I think one of the best things on earth to do with garlic scapes is to make pesto out of them. I seriously ate it with a spoon. I am not joking here people. I ate it with a spoon, by myself, in my kitchen, and I am not shamed to admit it. In fact, if I had more I would be in the kitchen, with my fingers in a jar, instead here with you fine folk. Nothing personal really. I am just in love!


So after I made this amazing pesto, I had to come up with things to use it on, instead of just a spoon. SO many ideas ran through my head. I thought of the Pesto Stuffed Pork Chops I made, or the Pesto and Mozzarella Stuffed Chicken Breasts. But because this was a new found love, I wanted to come up with new ways to enjoy it.

At my house we live for Sunday sports. Football and NASCAR. We are glued to the boob tube, taking just enough time away to grab something to nibble on and another cold beer. So with that thought in mind, I decided I wanted to come up with an easy appetizer that would seem like I made a huge fuss and taste amazing, but not make me knock myself out in the kitchen or pull me away from my big screen for very long. 



This is that perfect dish. You can fool your friends and family into thinking you have some insider restaurant secret. Make them think that you have found some new "Foo Foo" dish. When you and I both know that it is just some good ol' garlic scapes whipped up into an amazing pesto and plopped on top of some toasty bread with sweet grape tomatoes and spicy little basil leaves. Oh yessss this one rocks peeps!! Do it, do it NOW!!!

Garlic Scape Pesto Crostini

Ingredients

  • 16 (1/2 inch thick) slices baguette
  • Olive oil
  • Garlic Scape Pesto
  • 8 grape tomatoes, halved
  • 16 small basil leaves

Instructions

  1. Preheat oven to 350 degrees F.
  2. Drizzle the sliced bread with olive oil and bake until golden, about 5 minutes. Spread 1 to 2 tablespoons of the prepared pesto on each slice.
  3. Top with tomato halves and basil leaves.
Yield: 16
Prep Time: 15 mins.
Total time: 15 mins.
