Jalapeno Ham Salad for #Summer Chillin' #SundaySupper

This isn't that old devilish canned ham salad! It is new, and improved, and guaranteed to make your taste buds sit up and say, "Holla"!



You know I have talked about how I lived out of boxes and cans for most of my life. My Mom did it, I did it, and my kids craved it. One of my daughters favorite sandwiches were ham salad sandwiches. But nothing as fancy as this homemade ham salad. Oh no, it was that lovely can wrapped in paper with the little devil guy on it. Well, the devil is very appropriate because have you looked at the sodium content in that stuff? Holy smokes! It is enough to give you high blood pressure just reading it.


Then I started trying to get us all to eat healthier. Believe you me, getting her to give up that little pitchforked gremlin was a hard fight. She didn't earn the name Miss Picky Pants for nothing, and when she found something she liked she stuck with it! But eventually I came up with a deviled ham salad she liked and El Diablo was tossed aside like yesterdays trash, which actually he was but.....oh nevermind. Anyway, the shocker was that I was actually able to do it. Why I haven't posted that recipe yet, I have no idea. I will rectify that soon I promise.

Once she moved out I knew that I could start adding some spice to things. She is a ZERO spice kinda girl, again Picky Pants, so adding hot sauce after the fact was what we all had to deal with. I hadn't tinkered with my ham salad recipe, before now. But when I found out that this week's Sunday Supper theme was "Summer Chillin'" I knew exactly what I wanted to get into my kitchen and work on!


We have been spending quite a bit of time at the beach this summer, so coming up with things to pack without them being boring like PB&J or plain old lunch meat sandwiches became a priority for me. I want to enjoy the whole experience, sun, water, and the food. This sandwich was just what the Dr (or blogger in this case) ordered!

You can completely control the amount of spice you put into this salad. But trust me, the recipe as it stands is perfect for even the touchiest eater. I mean, it is actually Miss Picky Pants approved!!

Jalapeno Ham Salad

Jalapeno Ham Salad

Ingredients

  • 1 pound baked ham, rough chopped
  • 1/4 cup pickled jalapeno slices
  • 1/2 cup mayonnaise
  • 2 tablespoons Dijon mustard
  • 2 tablespoons flat-leaf parsley leaves, finely chopped
  • 3 green onions, whites and greens, thinly sliced
  • 1/2 red onion, finely chopped
  • Kosher salt
  • Cracked black pepper
  • 4 onion buns
  • Lettuce, optional
  • Sliced tomato, optional

Instructions

  1. Place ham and jalapeno in a food processor, and pulse until roughly chopped. Transfer to a large bowl, along with mayonnaise, mustard, parsley, scallions, and onion; stir until combined. Taste and add salt and pepper as needed. Add extra juice from the pickled jalapenos if spicier salad is desired.
  2. Chill before serving
  3. Place lettuce and sliced tomato on the bottom bun, scoop a generous amount of ham salad on top of it and top with the remaining bun.
Yield: 4 servings
Prep Time: 30 mins.
Total time: 30 mins.
