Pesto Stuffed Pork Chops, Grilled Pesto, Mozzarella, and Tomato Sammies, Linguine with Chicken, Tomatoes and Spinach Pesto, Cilantro Pesto Pasta, Creamy Pesto Shrimp Rolls, Garlic Scape Pesto Crostini, and Green Chile Pesto Breakfast Bruschetta, just to mention a few. Every time I made one of these dishes I would worry a bit while waiting for him to taste it. He never complained, and even told me that he enjoyed them. So what in the heck?
Then, while I was making this dish, he wandered into the kitchen asking what was for dinner. I told him and then quickly added, "I know your not a big fan of pesto though". He looked at me like I had said he was going to murder puppies or something. I mean like seriously shocked that I said such a thing about him.
"Why would you say that? I can't believe you said that!"
My brain says, "Uummmm Geeezzz it is only pesto here".
I actually say, "Well, because you told me quite some time ago that you didn't like pesto....ummmm so I figured you didn't like pesto."
"Noooo I just don't really like pesto on sandwiches".
"Ooohhhhh OK, you made that so clear to me, my bad".
NOT!!
Anyway, our personal pesto drama aside, this is one fantabulous pesto dish. You can use regular sweet Italian sausage if you don't want spice, but I highly recommend you make it with the spicy sausage. It really isn't super hot, but that spice? Ohhh ya baby!!
Bottom line this is quick, easy, and full of flavor. Perfect for a weeknight dinner!
Pasta with Spicy Sausage and Sun-Dried Tomato Pesto

Ingredients
- 1 pound penne pasta
- 1 pound spicy Italian sausage
- Sun-Dried Tomato Pesto
- Fresh basil leaves
Instructions
- Bring a large pot of salted water to a boil and cook the pasta according to package directions, saving a cup or two of the starchy pasta water.
- Meanwhile cook the sausage in a large skillet over medium-high heat, using a wooden spoon to break it up into small chunks.
- Add the pesto to the sausage and stir to combine.
- Add the drained pasta to the skillet, and toss to coat the pasta. Add the starchy pasta water as needed to get the sauce to your desired constancy.
- Garnish with basil.

Cook time: 00 hrs. 15 mins.
Total time: 15 mins.

At least he likes pesto in some ways but it's not the case with my husband. I can't get him to eat it at all. I'll have to make this for myself on one of the nights he is working an evening shift.
