Silky smooth mashed potatoes with the hint of garlic made stress free by use of your slow cooker.
It seems that every year I start cooking Thanksgiving dishes earlier and earlier. A lot of it is because I obviously need to have dishes to share with you here on the blog. Some of it is because with the blending of families and dinners being held at other peoples homes rather than mine, I need to plan a few get togethers to make sure we get to see all of our kids and family over the holiday. But honestly, I think the main reason is because I just, well, I just love Thanksgiving food!
I get excited for the dishes that only seem to be made one time per year like my Grandpa's Simple Stuffing, White Wine Braised Brussels Sprouts, Spiced Rum Candied Yams, and these fabulously smooth and ultra creamy mashed potatoes. For whatever reason, I only make them for the holidays Any other time I make your basic boiled potatoes mashed with butter and milk. Boom on the table with no frill, bells, or whistles. Yawn, boooorrrrrring! Why don't I break these bad boys out more often? Maybe it is because I feel a little naughty with all of the butter and cheese that is in here. I don't know. All I know is I need to get over it because these potatoes are so good I am determined to make sure we have them at least once a month for the rest of the year! OK, maybe not every month, but we need to have them a few more times before next Thanksgiving!
The other thing that is fantabulous about these guys is that you make them in your slow cooker. Ummm hellooooo, ya that's right. Let's free up some of that precious stove top space for the gadgillion other sides you are making this holiday. This makes the mashed potato portion of the show easy peasy lemon squeezy! Plus, you can serve them right in the bowl of your slow cooker, so they seriously are a one dish errrr dish! Less mess in your kitchen and dishes to do, and trust me that is important to me since all of my kids moved out and I no longer have
captives help to do the dishes.
The thing I love about these mashed potatoes, besides how amazing they taste, is that they save better than regular mashed potatoes. You know how regular mashed potatoes can kind of dry out in the fridge? These guys are so creamy, all you have to do is heat them up in the microwave, stir, and eat YUM!! They also make fabulous potato cakes and potato waffles. Ohhhh just wait for those recipes gang!!!

Creamy Slow Cooker Garlic Mashed Potatoes
- 3 pounds Idaho potatoes, peeled and cut into 1-inch pieces
- 1 cup chicken stock
- 3 large cloves of garlic
- 1 stick of butter, room temperatre
- 8 ounces mascarpone cheese
- 1/2 cup (or more) milk
- 2 tablespoons fresh flat-leaf parsley leaves, chopped
- Place the potatoes, chicken stock, and garlic in a slow cooker. Cover and cook on high for 4 to 5 hours.
- Test the potatoes, and when they are tender, use a masher and rough mash them in the bowl of the slow cooker to combine everything.
- Add the butter, mascarpone cheese, salt, pepper, and parsley, and blend with an electric mixer add milk as needed until creamy.
- Taste and adjust seasoning if necessary and serve.
Prep Time: 00 hrs. 15 mins.
Total time: 5 hrs. 15 mins.
