How the weather where you are at?

Winter's icy breath is breathing down my dang neck   and I have seriously been freezing my booty off!

It has been in the 30's and 40's, and my fireplace  has been cranking overtime, trying to heat the house to a temp that doesn't leave my toes and nose bright blue!

So of course I have been craving huge bowls of steaming hot soup, stew, or chili, and all of the carbs that I can possibly cram into my body! 


I have a ton of soup recipes to choose from, so I have been a happy girl cooking up pots of soul warming goodness on, what seems like, a daily basis. But have seemed to be lacking in inspiration for carby accouterments to compliment these luscious bowls of yum  

I have made a few things like Quick and Easy Dinner RollsCheddar Biscuits, and plain ol'cornbread have pretty much summed up my bread baking repertoire. But I have really been wanting to spice it up a bit.

I guess I shouldn't be too hard on myself, I have just gotten to the point of feeling a bit of confidence in my skills with this specific department. There was a day when I wouldn't even attempt to bake and it would be "Team Store Bought" all the way. 

But as I have let my budding baker's wings fly  (channeling my inner Betty Crocker), I have found myself baking more and more, and loving it.



Wanting to flex those new baking muscles, I decided to get a little adventuresome. I invited the entire family over, on a cold drizzly night , for a big bowl of my Game Day Chili , but didn't tell them that I was going to add a little twist to my regular cornbread recipe by adding a bit of cheese and these adorable mini pepperonis. 

I have always used Hormel pepperoni when I make homemade pizza , but had no idea they made a mini version. Color me so happy 

It was so hard not to eat them all before I could even get the corn bread baked! 

Put a few in the batter, 

pop a few in my mouth.....and a few more......and a few

....oh well, you get the picture. 

I even thought about adding a few to my chili, but I didn't. However that recipe may be making it's debut on the blog soon since I can't seem to get it out of my head. It sounds awesome, right? Tell me that I can't be the only one that is tickled to death at the thought of a pizza style chili!

So the kiddo's and Kevin all crammed into the kitchen to grab their bowls of chili. Sour cream, shredded cheese, and chopped onions were flying around as each of them personalized their grub. 

Then I unveiled the pièce de résistance, my Cheesy Pepperoni Skillet Cornbread. It was met with the ooohhs and aaahhhhhs you would expect at the opening of a new art display. I had to stifle a giggle at their enthusiastic response. I mean c'mon, it's just cornbread gang. 

I was immediately hushed 

How rude!! How were these people raised?? Oh, ya, they are mine.....never mind!  

But they quickly explained their momentary lapse in manners (like that never happens ever) by telling me to take a moment to look at my cheesy pepperoni masterpiece. 

It looks awesome Mom! Look at those little pepperonis, how cute is that? 

I had to admit, they were right.

Cheesy Pepperoni Skillet Cornbread

Ingredients

  • 1 cup yellow cornmeal
  • 1 cup all-purpose flour
  • 1 tablespoon baking powder
  • Kosher salt
  • 1 cup buttermilk
  • 1/2 cup milk
  • 1 egg, lightly beaten
  • 1/4 cup plus 2 tablespoons unsalted butter, separated
  • 1 cup shredded cheddar cheese
  • 1 cup Hormel Mini Pepperonis reserving a handful to place on top (Coupon for $1 off packages of Hormel Pepperoni products)
  • 1/2 of a medium onion, finely diced
  • 1 clove garlic, minced

Instructions

  1. Preheat the oven to 425 degrees F.
  2. Whisk the cornmeal, flour, baking powder and salt in a bowl until completely combined.
  3. Measure the buttermilk and milk in a measuring cup and add the egg. Stir together. Pour the milk mixture into the dry ingredients. Stir with until combined. Fold in the cheese and pepperoni. Set aside.
  4. In a small bowl, melt 1/4 cup butter in the microwave. Slowly add the melted butter to the batter, stirring until just combined.
  5. In a cast iron skillet, melt the remaining butter over medium heat. Saute onions until soft, 4 to 5 minutes. Add the garlic and saute for an additional minute. Pour the batter into the hot skillet with the onions. Spread to even out the surface.
  6. Cook for a minute, and then transfer to the skillet to the oven and bake until golden brown, for 20 to 25 minutes.
Yield: 8 servings
Prep Time: 00 hrs. 15 mins.
Cook time: 00 hrs. 25 mins.
Total time: 40 mins.
