These amazing little mini donuts are packed with pure holiday flavor. Guaranteed to fill even the biggest Grinch with the Christmas spirit!
I spent the entire day in my kitchen yesterday. Baking, and cooking up some fab holiday food. The smells were insane! I am serious. Kevin woke up and stumbled down stairs, all bleary eyed, mumbling "What smells so good?". I kinda felt bad (just a smidge), but he grabbed one of these donuts and headed back to bed so I figure he got his payment for the inconvenience. Thanks goodness I had already taken my pictures!
Now I am sitting here, next to my beautiful Christmas tree, with a hot cup of tea and a plate full of these delicious little treats. National Lampoon's Christmas Vacation (hellooooooooo my favorite holiday movie!) is playing, and my holiday candles are burning. If this isn't Christmas rolled up in a neat little ball and plopped in my living room I don't know what is. Aaahhhh I love this time of the year! I have been watching my Christmas movie collection over and over. I have everything from A Christmas Carol and Frosty the Snowman, to Christmas with the Krunks and Jingle all the Way! I have 2 whole shelves in my DVD rack dedicated to nothing but Christmas movies.
I think that is where the inspiration for this recipe came from. Between watching Holiday food shows, and all of my Christmas movies, I went to bed and dreamt of nothing but amazing Christmas themed dishes. Breakfasts, lunches, dinners, sweets, you name it and I dreamed it! Thank goodness I keep my food diary on my bedside table because as soon as I woke up I was manically scribbling away!
I knew this had to be the first one I made. I love luuvvvv lurve peppermint and chocolate together. Of course you can add a little booze to that, like my Boozy Hot Chocolate, and make me a very happy camper. But for this recipe, we are strictly booze free and family friendly.
I could have easily gone way overboard on the sweetness scale if I wasn't too careful. But the are perfect. The cake is light, with a mild hot chocolate flavor. They there is the glaze and crushed peppermint that say, "Hello, thanks for joining the party". It all balances so very well. Kevin has already become quite possessive with them, like he has been with all of my other Christmas treats. But he doesn't know that I invited the kids over for dinner tonight and am planning on sending at least half home with them! Ya, he'll get over it.....I hope!

Peppermint Hot Chocolate Donuts
- 1¼ cups all-purpose flour
- 3 envelopes of hot chocolate mix (I used Nestle's Rich Milk Chocolate)
- ½ cup sugar
- 1 tablespoon baking powder
- 1 egg
- ¾ cup buttermilk
- ¼ cup vegetable oil
- 1 teaspoon vanilla
- 1 cup Powdered Sugar
- 1 ½ tablespoon milk
- ½ teaspoon vanilla extract
- Crushed peppermint candies for topping
- Stir dry ingredients together in mixing bowl. Add egg, buttermilk, vegetable oil and vanilla. Using a mixer on medium speed, blend until smooth.
- Fill each cooking reservoir with about 2 tablespoons of batter.
- Bake about 4 to 5 minutes or until a toothpick inserted into donut comes out clean.
- Remove donuts to a cooling rack.
- In a small bowl combine the milk, powdered sugar, and vanilla. Stir until smooth. Dip the top of each top into the glaze and spin to smooth.
- Top with a sprinkle of crushed peppermint candies
