Vanilla Chai Fudge

This is quite possibly the creamiest, dreamiest fudge you will ever taste!

Aaahhh my darling foodies. Are you tired of sweet treats yet? Wait, did I really just ask that question? Is is possible to get tired of Christmas goodies? No nevvvaaahhhh!! I will gladly eat until I put myself into a sugar coma! I mean c'mon, if I am going to deny myself all year long, I deserve a month of going completely cookie/candy crazy. Am I right? I am right!

My kitchen counters have literally be cram packed with cookies, fudge, and all forms of sugary love. I laugh when I think about it because, if you look back over the entire year on the blog, I don't even have half the amount of dessert type recipes as what I have made this past month! I have told myself that maybe I should spread them out over the year, but I don't know. It is kind of a Christmas tradition to go completely bonkers with the sweets. What do you think? I just can't see eating fudge in the middle of July. Oh, don't get me wrong, I wouldn't turn my nose up at it! But would anyone really want to see a recipe for it at that time of year? Hhmmmmm? 

Yesterday, after I squeezed my rear into my jeans, I decided I needed to pack up the sweets I had in my kitchen and take them to my kids. I would normally wait until Christmas, but I decided I needed to spread the wealth rather than my rear. I packed up Cookie Butter Puppy Chow, Italian Wine Doughnut Cookies, Hot Buttered Rum Balls, Slow Cooker Dulce de Leche, Peppermint Hot Chocolate Donuts, and Cranberry Macadamia White Chocolate Fudge, along with this Vanilla Chai Fudge. That bag must have weighed 5 pounds I swear!!

My son's fiance is pregnant and he, like many other men, seems to be gaining "baby weight" right a long with her. So he is having jean issues right along with the rest of us. When I handed him the bag, and he looked inside, I got a big smile. But then it narrowed into an "I can't belive you are doing this to me" look! All I could say was, "I love you, Merry Christmas?". We both laughed. I mean heck, it is time to enjoy ourselves. Spend time with family and friends, enjoy every taste or every morsel you eat, and laugh till your face hurts. At least that is what my family does 😄! After the first of the year we can hit the treadmill and focus on other things. But right here, right now? Yup, we will enjoy every second of everything!!

Now if you will excuse me I think I will enjoy seconds, and thirds of this fudge!!

Vanilla Chai Fudge

Vanilla Chai Fudge


  • 4 tablespoons (1/2 stick) unsalted butter
  • 3 cups mini marshmallows
  • 1 cup sugar
  • 1/2 cup heavy cream
  • 1/2 teaspoon salt
  • 1 teaspoon cinnamon
  • 1 teaspoon cardamon
  • 1 teaspoon ginger
  • 1/2 teaspoon nutmeg
  • 1 teaspoon vanilla
  • 1 bag (12 ounces) white chocolate chips


  1. Line and 8 x 8" pan with with 2 crisscrossed pieces of parchment paper, leaving extra on the ends for handles.
  2. In a large saucepan, combine butter, marshmallows, sugar, cream, salt, cinnamon, cardamon, ginger, and nutmeg. Cook over medium, stirring occasionally, until marshmallows are melted, 8 to 10 minutes. Off heat, stir in vanilla and white chocolate chips until chocolate is melted.
  3. Pour fudge into prepared pan, and smooth top. Let cool 30 minutes. Refrigerate until set, about 1 hour.
  4. Using overhang, lift fudge onto a cutting board; cut into squares (6 rows by 6 rows).
Prep Time: 00 hrs. 00 mins.
Cook time: 01 hrs. 45 mins.
Total time: 1 hrs. 45 mins.
