Grilled Chicken with White BBQ Sauce



I know I have been talking about how much I enjoy Kevin being the "King of his domain" (grilling) because it gives me a nice break from cooking. All I have to do it decide on what side we might like, which lately has been grilled corn on the cob or baked potato on the grill so he gets to do everything!

But if I am being honest with you, now it is just me and you right? If I am going to be 100% honest with you, I kind of miss grilling. You see, I am a gas girl, OK charcoalers you can stop with the face. It is not that I prefer gas to charcoal, it is just that I never learned how to use charcoal. My Daddy was a gas griller, my ex was a gas griller, I had a gas grill....get the picture? 

Then Kevin comes along and looks at me like I have lost my mind the first time I put a steak on my gas grill. "Well Mr, if you want me to cook on charcoal buy me a grill", was my response. He had a charcoal grill at his place, but our kids live there so they use it and, well being the faaaaaaabulous parents that we are, we didn't want to take it away from them. So you can imagine how excited Kevin was when we moved into the new place and found that the previous tenants had left a grill/smoker behind. Oh he was all kinds of happy!

But then the funniest thing (or annoying depending on how you look at it) happened. He became possessive with the dang grill. It became his job, or territory, or domain, depending on how you look at it. And like I said, I like not having the demand of cooking every night. But I think my pride is starting to get involved. Here I am a food blogger, I talk about the food I make and how to make it, but I have to hover over Kevin and take notes because I am not "cooking" the food. I can do this, it is not rocket science right? 

Alright, you have convinced me. Next time we grill, which is tonight, I will be rolling up my sleeves and stepping into his domain. I sure hope he slept well today!!



Grilled Chicken with White BBQ Sauce

Grilled Chicken with White BBQ Sauce

Ingredients

  • 8 chicken thighs
  • 1 cup mayonnaise
  • 3/4 cup apple cider vinegar
  • 1 tablespoon sugar
  • 1 teaspoon dry mustard powder
  • 1 lemon, zest
  • Fresh cracked black pepper
  • Kosher salt

Instructions

  1. In a bowl, combine the ingredients for the BBQ sauce. Cover and refrigerate for an hour to allow the flavors to meld
  2. Preheat the grill to medium-high.
  3. Season the chicken thighs with salt and pepper.
  4. Grill chicken over medium-high heat for approx 5 to 7 minutes per side depending
  5. Serve with leftover sauce.
Yield: 4 servings
Prep Time: 01 hrs. 00 mins.
Cook time: 00 hrs. 10 mins.
Total time: 1 hrs. 10 mins.

Classic Macaroni Salad

Classic mac salad made a bit lighter. Trust me, you won't miss all of that mayo and the Greek yogurt adds a little tang. This is the perfect side dish for your summer BBQ.



I have to admit. I have had macaroni and potato salad on the brain lately. With all of the grilling and smoking we have been doing, a nice cool side dish is just what the Dr. ordered. Plus it keeps me outside enjoying the weather, instead of inside cooking away. A little bit of boiling, a few ingredients, and BOOM yumminess in a bowl.

I used to be the one that just grabbed the tub salads from the store. I would run in to pick up something to throw on the grill, and just make a beeline for the deli and grab their premade potato or macaroni salad. Sometimes they were OK, but for the most part they seemed very bland with TONS of mayonnaise. Especially the macaroni salad! It seemed like there was equal amounts of pasta and mayo on it!! I love mayo as much as anybody but really

Spiced Yogurt Chicken Kabobs for #SundaySupper #ChooseDreams

Slightly spiced, with the tang of Greek yogurt, the chicken kabobs are a must grill!



This week Sunday Supper is teaming up with American Family Insurance to help families eat healthy. No matter if you are on the go, are working on a budget, or just want to enjoy the summer outdoors, your family can find a way to eat healthy and feel great about doing it.

It is simple, and I am living proof. I had surgery 10 years ago and lost 160 pounds. Since then I have kept it off, my son has lost 40 pounds, my daughter 40, and my darling Kevin has lost 20 pounds. Go family!!

How have we done it? A special diet? Work out plan? Nope! It has simply been a matter of changing our eating habits and getting up off of our ummm, nether regions.

This has been a tough week for me. I ended up with a touch of the flu PLUS Mother Nature decided to take our sunshine away, which made me feel even worse! All I wanted to do was pull the covers over my head and sleep, which I did do a lot of. I mean you know I am sick when I don't even want to nose through Pinterest!! When that happens Kevin gets worried and that is when the thermometer and Nyquil get broken out. But 5 days, and a ton of fluid later, I am feeling much better. A little weak, but waaaaaaaaaaay better than I have all week!

So now it is back into the land of all things food and fun.....Pinterest!! I <3 Pinterest! I remember when my daughter first started her account. I thought, "What a fabulous idea!". I had a ton, and I mean a TON of recipes and websites bookmarked on my computer. The idea that I could clean those all out and organize them on one page for easy reference made me sooooo happy (we have discussed that I am easily amused right?). 

Now I have 117 boards (and growing) and almost 15,000 pins. I would say I am a bit of an addict. Butttt that is what allows me to find all of the wonderful goodies I share with you all here. So I will shut up now and get to that very thing!

Garlic Scape Pesto Flatbread



I have been going through a lunch time rut lately. 

I have burned myself out on salads, lettuce, macaroni, potato, or otherwise. Sandwiched are a bust, as well as wraps. I get like this sometimes, and then I do the worst thing possible, I go without eating because I am not enthused. 

I become that little kid that drives Mom crazy because they stand in front of the refrigerator with the door open. Peering in like they are hoping something good to eat with miraculously appear inside. Helloooooooooooo is there anybody in there?

Oh my foodie friends, I think I have developed a new addiction! Yup, it is pretty bad, and getting worse by the day. What, pray tell, is this new addiction you ask?

Well, I just can't seem to stop making new sauces! I know that must not seem like a bad thing right? And I guess, on the outside, it really isn't too awful horrible. But oh.my.goodness. On the inside? The inside of my ol' noggin? WOW, it is one crazy, out of control place in there folks! There is seriously non-stop ingredients bouncing around in the hopes of colliding and coming out a brand new sauce to end up on the grill!

Roasted Strawberry BBQ Sauce for #SundaySupper

I love roasting just about any fruit or vegetable, so it seemed only natural to add one to my BBQ sauce. I had no idea how wonderful it would turn out, and quickly become a family favorite!



This summer has been all about chillin' and grillin' with the family. Warm weather and sunshine just seems to bring everyone together, and what could be better than a BBQ to feed the crowd? So we have been giving our grill, and smoker, quite the work out. I have been going crazy working on all sorts of new sauces, but was super excited about this one. I mean, come on, roasted strawberries? Uhh hellooooo! Although, again my doubting Thomas was not too sure about what I had planned. 

Hey, I don't question him in his domain, the grill, so why should he be able to question me in my kitchen.

Soooooo, I then found out that this weeks Sunday Supper theme was "Summer BBQ Party". 

PERFECT!!

These Are a Few of My Favorite Things 7/19/14



This week has seemed so hectic. No reason really. It was kind of the same old same old. Maybe it was because Kevin had to work 9 days in a row, so we cram packed a lot of fun into this past weekend. Plus I spent a whole day cooking up some yummy treats for you all. 9 recipes in one day *whew* my back was killing me! I am not as young as I think I am.

Even with everything that has been going on, I was able to get my little fingers typing and cruised through the ol' interwebs to find some great stuff for you all. I love being able to tell Kevin that I am "working" when he peeps over my should and finds me on Pinterest. He just gives me the look like "ya OK" but leaves me be.

On the home front news, I finally found out what was munching on my pepper plants. I was moving them and found a big fat ugly SLUG! *shudder* Those things seriously creep me out, and here in the PNW they grow like someone fed them steroids. UGH!! But between moving my pots to the top of a table (where the slugs can't get...I think), I took some advice from some of my green thumbed readers and sprinkled Epsom salt and crushed up egg shells around the bottom of the plants. So far so good, so cross your fingers for me. I am going to have to get the pest situation handled quickly next year because I am going to move from container gardening to raised beds. I may build a greenhouse for my pepper plants. It just depends on how adventurous I am feeling (and how much it will cost).

Deviled Egg Potato Salad

How can you go wrong with all of the flavors of your favorite picnic food, deviled eggs, combined with potato salad? Think traditional potato salad, meets deviled eggs, and has a delicious baby!



With all of the grilling going on around here I have spent minimal time in my kitchen. I think the only time I have had my oven on in the last month was to make my Summer Berry Galette. But no man (or woman) can not live on meat alone. no matter what Kevin says.

Summer Berry Galette

The ease of refrigerated pie dough coupled with the taste of summer berries make this simple dessert a huge hit in my book!



Oh how I love summer! I know I have been saying that a lot, but I can't help myself. Who can blame me? 

We have been enjoying our days of lounging in the sunshine, and grilling just about anything that won't hold still. I catch myself wandering through the grocery store wondering if I can throw the things I am finding on my grill. Or smoke it, which is our new love. 

We were so lucky. The previous tenants left behind an old offset smoker. And when I say old, I mean old! It is rusty and leaks a lot of smoke, but it is perfect for us to practice on. Plus I figure, if we can get it right on this smoker we will be golden when we buy a new one right? Shoot, we won't know what to do with ourselves when we get a smoker that works the way it is supposed to!

Grilling and summer go together like peanut butter and jelly! Once the weather hits 70, I am ready to say goodbye to my oven and camp outside for the remainder of the summer. But hey, if you only had 2 to 3 months of sunshine all year, like we do in Western Washington, you would feel the same way, I am positive!

One of the things I love to do on those balmy summer nights is to enjoy a nice glass of wine outside on the deck with my guy. I know a lot of people think that grilling calls for some cold beer, but I am here to say “No-no my friends”, wine is where it is at!

Well, it has been 2 weeks since the last TAAFOMFT post. Did ya miss me? Please say yes, you don't want to add to my therapy bill do you?

Just kidding, I don't see a therapist......often.

So, I don't know about you, but our weather here in the PNW has been OhhEmmGeeeee frickin' amazing!! I am serious, it has been hard to stay indoors. My desk is right by a huge picture window and my eyes keep wandering to the sunshine and beautiful green right outside of it. I have been fighting it hard people! 

2 cups of blah blah, 1/4 cup blah blah, 2 tablespoons.......oh lookie a butterfly!! 

Ya, that is pretty much how my days are going right now.

I was, however, able to sit still long enough to put together this post for you so you can see the goodies I found while I was able to sit still for more than 15 minutes.

Lemony Broccoli Slaw

This bright, lemony slaw is a refreshing summer side dish, and is made light with the use of fat free Greek yogurt.



Are there certain flavors that just remind you of summer?

I know that lemon is one that always does for me. Just that bright citrus scent brings on images of sunshine and blue skies. All I have to do is smell a lemon and I am in a good mood. Anyone else like that? I have citrus scented hand soap, citrus scented body wash, citrus scented candles, citrus...well, you get the point.

Garlic Scape Pesto Crostini

Don't know what a garlic scape is? OhhhEmmmGeeee you need to find some, and then make this dish ASAP! I mean NOW, go find some! Wait, read this post first, then you can go find some!



So you all listened to me go on and on about how flippin' awesome I think garlic scapes are. I found those little beauties at the Pike's Place Market in Seattle and there was a love match made that will never end. One of the first things I did was make some awesome Garlic Scape Pesto. Beside being fabulous roasted, and in salads, I think one of the best things on earth to do with garlic scapes is to make pesto out of them. I seriously ate it with a spoon. I am not joking here people. I ate it with a spoon, by myself, in my kitchen, and I am not shamed to admit it. In fact, if I had more I would be in the kitchen, with my fingers in a jar, instead here with you fine folk. Nothing personal really. I am just in love!

Jalapeno Ham Salad Sandwiches #SundaySupper

Jalapeno Ham Salad Sandwiches - This isn't that old devilish canned ham salad! It is new, and improved, and guaranteed to make your taste buds sit up and say, "Holla"!



You know I have talked about how I lived out of boxes and cans for most of my life. My Mom did it, I did it, and my kids craved it. One of my daughters favorite sandwiches were ham salad sandwiches. But nothing as fancy as this homemade ham salad. Oh no, it was that lovely can wrapped in paper with the little devil guy on it. Well, the devil is very appropriate because have you looked at the sodium content in that stuff? Holy smokes! It is enough to give you high blood pressure just reading it.

Pork Chops with White Wine and Mushrooms



Have you ever heard of a website called FlyLady? It is totally dedicated to helping people get organized, streamline their lives, and de-stress. I found FlyLady waaaaaaaaay back in the day when it was just a yahoo email group. They sent out several emails a day, reminding you to do certain tasks at certain times, to keep you on track. 

I was so excited to find them! I know I have mentioned, more than once, that I need major help in the organizational portion of my life. I immediately signed up for every email they would send. I mean I got the ones that told me to drink water and go to bed. 

That worked for ohhhhh, about a week. Then I let the emails back up and by the time I read them it was way past the time to do the task it required *sigh* ahhh the best laid plans, and all that good stuff.

Peach Balsamic Chicken Skillet {Guest Post}


Today is a rare occasion for me. I get to sit back, relax, and put my feet up because I have a guest poster. Yay! And boy are you guys in for a treat! So let me step aside and let Julie have the kitchen.



When I was a kid, my grandparents lived down the street from a peach farm in Georgia.  Every time I visited we’d go peach picking and turn those peaches into cobblers, pies, ice cream, and a million other desserts.  As an adult, my body is a little less forgiving when I eat peach cobbler for every meal, so to bring back the wonderful peach-filled grandparent memories, I’ve been experimenting with the fruit in other less-sugary dishes.  This skillet recipe is one of my new favorites.  It’s savory without taking away the sweet signature peach flavor.  Even my picky husband liked it, which I deem quite a feat!
