As much as I want to believe that we are on the down slope of Winter, the reminders of the seasons least favorite offerings have been raising their ugly heads, or rather sore throats, cough, and fever. 

Yes my foodie friends, flu season has been kicking my butt. One by one it has been working it's way through the family, making us all miserable. 

First it was me dealing with the fabulous headaches, sneezing, and all over body BLEK. Then my darling Kevin came down with the cold weather crud. 


Umm can I just stop for a moment and pose a question to my fellow girlfriends and wives? 

Is it just me, or do our men change from the big strong men in our lives, to little boys that want their Mommies when they are sick? 

Kevin is pretty large and in charge in his normal healthy state but, good Lord, hit him with a touch of the flu and I am blessed with the addition of another child!

Anywho, It worked it's way through my son's fiance, who pretty much explained that, flu, or morning sickness, it didn't really matter, she just felt like crap. 

My son caught it, but brief enough to make his seem more like the recovery from a long weekend party binge. 

We thought it was all over, but my poor girl got hit with the worst of it. After several hours in the urgent care the other morning, we got the news that she had a very nasty case of strep throat. 

Have you noticed that as soon as someone discovers you have strep throat it is more like you are carrying the plague? 

People duck, cover and run! 

When I came home Kevin was all but ready to dump an entire bottle of Purell over my head!

But the Dr assured me that it is not as contagious as we all seem to think it is. Bless her heart though, she put one of the masks they gave her to "cover her cough" on and wore it the rest of the time she was with me. We went to Target to pick up soups, juice, and jello so she could actually get some sustenance in her body, and hit the pharmacy to pick up her antibiotic. 

Which, have you ever seen those pills??? 

OhhEmmGeee people, how someone that feels like they are swallowing crushed glass is supposed to gag those things down is beyond me.

So I of course came straight home and went into "Mom mode". Out came the crock pot, and all of the fixin's to make a big ol' pot of Jewish penicillin. She is just like me, if I am sick the first thing I want is a big warm bowl of chicken noodle soup. 

This recipe makes the absolute best version of that ever! When it was done, I put it into containers for her and stopped by to drop off her surprise. She was so happy, you would have thought it was Christmas and I was giving her the best gift ever. I love it when I can do things like that.

So if you have sick loved ones, or are feeling under the weather yourself, this is an absolute must make! 

But you don't have to be sick to enjoy it, oh no. I came home and promptly threw another batch in to save for me 

errrrr us. 

And as I type this up, and look at the photos, I suddenly have the urge to go thaw a batch out and curl up with a nice hot bowl!

Slow Cooker Chicken Noodle Soup

Ingredients

  • 2 large boneless skinless chicken breasts
  • 1 tablespoon poultry seasoning
  • 1 onion, chopped
  • 3 carrots, chopped
  • 3 ribs of celery, chopped
  • 3 cloves garlic, minced
  • 2 quarts chicken stock
  • Kosher salt
  • Fresh cracked black pepper
  • 12 ounces homestyle egg noodles
  • 1 handful fresh parsley leaves, chopped

Equipment Used

Instructions

  1. Place all ingredients except egg noodles in a slow cooker. Cover and cook on high for 3 to 4 hours, or low for 6 to 8 hours.
  2. Remove the lid and shred the chicken breasts in the bowl with two forks. Turn heat up to high, if cooking on low, and add the egg noodles. Taste and season with more salt and pepper if needed. Cover and cook for another 30 minutes, or until noodles are done.
  3. Top with chopped parsley.
Yield: 6 to 8 servings
Prep Time: 00 hrs. 10 mins.
Cook time: 08 hrs. 30 mins.
Total time: 8 hrs. 40 mins.

  2. I am always looking for a new receipe for chicken soup. Doing in a slow cooker has to make it so much better. I put one or two celery stalks in to 2 quarts of water with the chicken. Then if in the end if needed I ad herb ox powder. I do disgard the celery and onion after the flavor is there.

  4. Mine is in the crockpot as we speak. Thank you for an old fashioned chicken noodle soup recipe. The celery and carrots smelled so fresh as I cut them up, may add some water to thin it a bit.

  6. Sorry, but I was disappointed with this soup. The herbs totally overpowered the soup. I would suggest to anyone to only use 1/2 of the amount of poultry seasoning suggested. I added some chicken stock powder, red chilli flakes and tomato paste to try to balance the flavour of the soup. Once I made these changes, we loved it. I would make it again with less of the poultry seasoning. Thanks for the recipe.

  7. The only I would change is the poultry seasoning. Add chicken bouillon. Taste for flavor
