Plain old potatoes get boring after a while, so zip up that weekday meal with this creamy sweet potato mash. A little bit spicy, a little bit sweet, and a lot of yummy in your tummy!
Lately I am hooked, and I mean hoooooooooooooked on those reality shows on Discovery, Bravo, LMN, etc. You know what I am talking about? Oh, if I tell people that we are huge fans of Deadliest Catch, and have watched every episode of every season, nobody is going to think I am crazy. People might think it is a little strange that I watch Street Outlaws and Fast and Loud, but I grew up with street racers so loud fast cars make me all happy inside (not as much as food, but it is close). And I know that no one would think anything of me waiting patiently every week for the next episode of Top Chef right? But let's bust out the reallllllllllllllly weird ones. How about Moonshiners? Mountain Men? Alaska the Last Frontier? Life Below Zero? Alaskan Bush People (those folks are way cray!)? Am I weird? Ya, don't answer that.
I don't know when this love affair began. It started slowly, one show at a time. Kevin used to fish in Alaska when he was young, so I think Deadliest Catch was my "gateway" show. Once I got hooked on that, it took off from there. I used to watch network TV, and then search on demand for shows to watch when nothing else was on those channels. But anymore I could give a hoot about network shows, and am constantly scouring Animal Planet, TLC, and ScyFy to add more shows to my viewing lineup.
Don't get me wrong, I don't sit in front of the TV all day. But Kevin works nights, and I am an insomniac, so finding things to watch can be an issue. Plus when you watch network TV on demand you can't fast forward through the commercials AH-Nnoying!! Evidently I am not only an insomniac, I am an impatient insomniac!
But another thing I tend to do when I can't sleep is wander into the kitchen. I know, DANGER DANGER Will Robinson! But sometimes my best ideas come in the middle of the night. More often than I like to admit, I dream about tasty dishes to create. Enough so that I have a notebook on my bedside table so I can write the ideas down.
But this did not come to me in a dream. I was clearly craving a big bowl of creamy, buttery, mashed potatoes. However, plain ol' taters just wouldn't do. I knew I had sweet potatoes, so flashbacks of holiday meals began to dance in my head (who needs sugar plums when you have sweet potatoes?), and down to the kitchen I went on a potato mission. A few minutes later this glorious pot of mashed potato goodness was on my stove begging for a big bowl and spoon.
I of course could not disappoint them, so I obliged. There is nothing like sitting in bed watching those wacky Alaskan Bush People with a steaming hot bowl of creamy sweet potato mash!!

Creamy Sweet Potato Mash
- 1 pound sweet potatoes (about 2 potatoes), peeled and cubed
- 4 tablespoons unsalted butter, diced
- 1/3 cup fat-free Greek yogurt
- Kosher salt
- Freshly ground black pepper
- 1 tablespoon packed light brown sugar
- 1/4 teaspoon cayenne pepper
- 2 tablespoons fresh chives, chopped
- Boil the potatoes in a large pot of salted water until fork tender. Drain the potatoes and place them back into the pot.
- Add the butter, Greek yogurt, and mash until smooth. Add the salt, pepper, brown sugar, cayenne pepper, and chives, stir to combine.
Prep Time: 00 hrs. 10 mins.
Total time: 25 mins.
