Cilantro Lime Crema - This tasty sauce works so well with everything from tacos, to burritos, to enchiladas, and more!
With Cinco de Mayo on the horizon, I knew I needed to step up my game and get some Mexican food on the blog. Looking back, it seems like forever since I posted any which, for me, is crazy to think of. I used to make Mexican food 2 to 3 times a week and if you search the blog you will find a TON of Mexican inspired recipes. I just can't help it. I am addicted to it! I grew up in Southern California so Mexican food is all but in my blood. Butttttttttttt I now live with someone that isn't a huge fan, so I just don't make it as much as I used to. Ha, just wait for the next week or two, that will change! I may be gorging myself on leftovers, but I will be a happy happy girl!!
I decided to start at the beginning. You gotta have a good sauce for your food right? I mean when you BBQ you need your sauces right? Italian food too! And Mexican food is same. Be is the chipotle mayo and Hatch green chile sauces I used for these Crispy Chipotle Shrimp Burritos, the cheesy chile sauce for this Poblano Chicken, or the amazzzzzzing avocado cream sauce on these Chicken Enchiladas, a good sauce can make a Mexican dish.
This is a sauce that I have used for soooooo many different dishes. It is awesome with burritos, tostadas, enchilada, and tacos, and it couldn't be any simpler to make. I love food that you don't have to work hard for don't you? I would much rather be feeding my face than chopping ingredients for 30 minutes!
Plus, this sauce can cross over to other cuisines. It works really well with Asian dishes. I use it with fish or stir it into rice (or better yet, quinoa), and I have been working on some fusion style food. Hint hint, wait until you see what I have in store for you on Sunday. Hellooooooooooooo major yumminess! This works really good as a dip for veggies too!
Add a bit of jalapeno if you want a little kick.
