We have had a few warm days here in Western Washington, and I am dying to get outside and enjoy it. 

I am serious about that folks. 

I will see the sun pop out on my deck and I will run outside so I can just sit in it and soak it up. Then a cloud will roll by, so I will rush back inside so I can get some work done. Awhile later, out pops the sun and off I go! It makes it hard to get things done, but I have ADD so I never stay on track anyway, and feeling the sun on my face is waaaaaaaaaay worth a little bit of disorganization!

How's the weather where you are? 

I have been dreaming of sunshiny days, for days on end, with no rain in site 

Which gets me all fired up to make "picnicky" types of things. 

I just have visions of Kevin and I at the beach with a basket, blanket, and a nice bottle of wine   

But the pièce de résistance will be these little luscious bites of sunshine! Oh ya baby!!

I found these bad boys on Pinterest a while back, and as soon as I saw them I knew I had to make them! I had originally been looking for something to do with lemon curd, but these beauties we calling my name. So I headed on over to Crazy for Crust to check them out.

Ya say that 5 times real fast!! 

I might not be able to say it 5 times, but I'll bet that I can down it 5 times quicker than everybody else! 

She even has a cookbook folks. That is going on my "This is what I want for my birthday list".

I made these for as a tester to see if this would be the dessert I wanted to make for Easter. 

Once they were out of the oven, and cooled, they were devoured by the family in like 0.2 seconds flat! 

It made me wish I had made a double batch!! 

I know I always say I have the anti-baking gene, but the thing is though, these are sooooooo simple to make, can I really consider it "baking"? 

Wait, I mixed ingredients, 

put them in a pan, 

and baked them in an oven. 

YES I baked!! Yay me!

If you want to be all Betty Crockery you could make your own pastry crust, but why? 

Take the shortcut people. It gives you more time on Pinterest looking for more awesome things to make and impress the fam with!!

Tiny little bites of heaven, these little lemon pies are easy to make and will have your family raving about your baking skills!


  • 1 box of 2 refrigerated pie crusts
  • 1/4 cup butter, melted
  • 1 1/2 cups granulated sugar
  • 3 eggs
  • 1/4 teaspoon salt
  • 1 tablespoon lemon zest
  • 1 teaspoon vanilla extract
  • 1/4 cup fresh lemon juice
  • 1/4 cup milk
  • 1 tablespoon all purpose flour
  • Powdered sugar, for dusting

Equipment Used


  1. Preheat oven to 350°F.
  2. Spray 2 24-count mini muffin pans with non stick cooking spray.
  3. Dust your counter, or cutting board, with flour and roll out the pie crusts. Cut 2.5” circles with a cookie cutter. Press each carefully into the mini muffin holes.
  4. Re-roll dough as needed. Chill until filling is ready.
  5. Whisk melted butter and sugar until smooth, then whisk in eggs until the mixture is yellow, about 30 seconds.
  6. Add the salt, lemon zest, vanilla, lemon juice, milk, and flour, and whisk until smooth.
  7. Fill each mini pie crust with 1 tablespoon of filling.
  8. Bake pies for 17-20 minutes until the tops are no longer wet. The crust will just be very lightly brown.
  9. Cool pies completely before removing from pans.
Yield: Approx 48 mini pies
Prep Time: 00 hrs. 20 mins.
Cook time: 00 hrs. 20 mins.
Total time: 40 mins.

Just make sure you don't make them home alone or they might be all gone before anyone else gets some LOL Yes, store bought crust is a life saver (and stress saver for me)!

    1. Yes, we have actually hardly had any rain...weird LOL I can tell you that it was hard for ME to not eat a dozen of these little guys. I guess sometimes I do have a tad bit of will power!
