Last week I ended up with some sort of a bug. I don't know if it was a summer cold, or just my allergies deciding to raise hell with me (which they are known to do quite often). All I know is that I felt horrible. Headache, sore throat, tummy was just "Blah", and nothing sounded good. All I wanted to do was sit on the sofa with my blanket, tissue, and Netflix. I had no energy, or desire, to cook anything. Even thinking about food was off the table. Untillllllll a little birdie, or voice, wait let's go with birdie because voices in my head just make me sound...well anyway...the birdie reminded me that I haven't made posole in a very lonnnnnnnnnng time. And with that, a spark of energy hit me and I jumped, OK, OK, maybe that is exaggerating a bit. Let's just say I got off the couch with purpose.

Do some foods just make you smile? Maybe it is because they are your favorites, maybe they remind you of childhood memories, or maybe they are just plain fun. I know, I know, again with the eggs? But I can't help it. I will eat eggs for breakfast lunch AND dinner just about any chance I have lately. And why not? They give you protein, are easy to make, and just taste so ding dang good. Especially when you pair them up with some spicy salsa fresca! Holy cow they are good, and perfect for a quick Weekday Supper.

I have been on a salsa kick lately too. I can't tell you how many batches of this salsa fresca I have made in the last couple of weeks. I made it because I love salsa with my eggs, so I had been eating it for a few days before I decided to share some with Kevin. Why so stingy? Well because I knew he would love it and I was feeling a bit hoardish. Kinda like a 5 year old "Mine....mine....mine!" And sure enough, as soon as he tasted it he started shoveling it in with both hands. He even threw some in a tupperware container to take to work with him. I guess I should be flattered right? Ya, get over it Bobbi!

Happy almost Friday gang! I am in a super good mood today!! Why you ask? Well I will gladly tell you.....my granddaughter was born this past Monday. Yes, I am officially Nana B and I am over the moon happy, excited, emotional, oh you know, all of that giddy, goofy, mushy stuff. All of a sudden I am one of those grandparents that can't get enough pictures. My Facebook, my phone, and as soon as I can get them printed out my walls, are/will be covered with photos of the most precious baby I have ever held in my arms, aside from my kids (nice save there Mom, right?! Seriously, I can't get enough of this kid! OK, I will gather myself and chat about other things now, like this fabulous salsa. 

I love to use fresh produce as much as possible. And I am not talking just the fact that I bought it in the produce department of the grocery store. I am talking about seasonal, raised in my garden, or bought at a farmer's market kind of produce. You know, the kind that tastes amazing, like it is supposed to taste? Ya, that stuff.

A couple of weeks ago I decided that I was going to make some changes in my eating habits. Call it being 50 *cough* or blame it on the fact that my new granddaughter is here, which has lit a fire under my butt to get up and moving and into good shape. But I have really been determined to make changes, and stick to them.

Some of the changes are, focusing more on eating proteins, getting my veggies in, and cutting waaaaaay back on my bread and pasta consumption. Ya, all good ideas right? Sure they are. But before you begin to whoop and holla and chant my name, can I tell you how hard it has been? I mean, I am the mac and cheese queen, and I loves me some bread. There were days that I had bread breakfast, lunch , and dinner. YIKES!

Happy Thursday gang! I know, I am a bit behind on getting this post done right? Usually I have them written the day before, and they post by midnight. But, I kind of wanted to write about NOW. Are you totally burnt out on Mexican food yet? I know, I know, I have had quite a bit of it on the blog lately. But I seriously hope you aren't because I just seem to be hooked on it (again). It just seems like, when I sit down to make up the menu for  next week, a million Mexican inspired dishes pop into my head. I know that it is the beginning of grill season, and you all know I love BBQing and grilling, but tacos, and burritos, and tostadas have just been calling my name.

Happy Sunday y'all! Can I possibly interest you in the creamiest, dreamiest mac and cheese ever? I mean we have 4, yes count em, 4 different kinds of cheeses in this stuff including white American, Parmesan, cream cheese, and last but certainly not least, extra sharp white cheddar, cute little corkscrew pasta, and a tiny pinch of spice. All of which all adds up to mind-blowingly good mac and cheese that I could eat every day, and actually have been eating it every day for the last 2 weeks, sometimes twice a day. Ya, it's the truth gang. I was eating it so fast I actually had to make a second batch just for Kevin so he had it to take to work for his lunch every day. Yes, he wanted his own batch. I am not even allowed to touch it!

This past January I made the resolution to get back in shape this year, and up until now it still wasn't happening. I can always come up with excuses not to work out. I have too much work to do being the big one but another one that I have used, on more than one occasion, is that I don't like our water and hate buying bottled water. I mean if you could see and/or taste my tap water? Bleck!! And buying bottled water? Hellooo, trying to save the planet over here and all that good stuff. So that was that, and my resolution was pushed to the back burner.

But from the back of my mind that little voice was whispering, "Bobbi, quit making excuses and get your rear in gear woman!" Why do the voices in my head have to be so dang annoying??
