Quick and Easy Shredded Chicken Nachos - An everyday weeknight meal that is quick, easy, and sure to put a smile on your family's face!
I can remember weeknight meals, when my kids were growing up, being a total pain in the rear. Between school, and sports, and homework, and whatever else might pop up, it was so hard to get a hot meal on the table at a decent time. Thennnnnnnn throw into the mix picky kids. Oy!! Trying to find recipes that my kids would eat, both of my kids that is, was near impossible. Oh, if it came from a drive through, or a box (ewwwwww) they seemed to be thrilled. But let me break out some fresh veggies and you would think I was trying to feed them arsenic! Ya, they were a bit dramatic at times.
I used to love to torture them though.
"Mom, are you cooking dinner?" This was yelled from upstairs.
"Yes I am cooking dinner"
"What are you making?"
"What kind of food?"
"The kind you eat!"
That used to get them every time, and made me giggle like a 5 year old.
However, I knew there was one meal that I could make that would make them run to the dining room table like their pants were on fire and I had the bucket of water. Nachos! Yup, they loved them, and acted like it was Christmas morning every time I made them.
I have to admit, it was a fun meal. You kind of felt like it was fast food-ish, which I am sure is one of the reasons my kids loved it so much, but I could sneak veggies in on them. They never seemed to notice the tomatoes and onions.
I think one of the reasons I loved them so much was because we all huddled together nibbling and gabbing. It was the best time for me to check in with them to see how things in their life we going. I welcomed those times as often as possible!
Now my kids are all grown up, but still come over for dinner at least once a week. I usually try to mix things up by trying new recipes (they call themselves guinea pigs), and making oldies but goodies.
That is what I did on this night. I had picked up a bag of the new Hormel Shredded Chicken Taco Meat, and immediately knew that I wanted to incorporate it into our family fave. I had never made nachos with shredded chicken because I just didn't have the time, or patience back then, to cook and shred chicken before I made the nachos. Cooking up some ground beef, and tossing in some seasoning was about a much as I could muster most nights. Oh, how much do I wish this taco meat was available back then?
I knew I was going to like it because we already love a lot of Hormel meat products like their pre-mainated pork tenderloins, loin fillets, and roasts, but had no idea how much we would like it. It is made with juicy dark meat chicken (which you know is where the flavor is at), and the perfect amount of seasoning. We we nibbling on it right out of the bowl before it could even get on the nachos! Mental note - buy two bags next time!
Also, as many of you know, my darling Kevin is not a big Mexican food lover. But you would never have guessed it by the way he attacked these nachos. I was honestly a bit worried about getting my fingers bitten!
Then, the unbelievable happened, he asked me if we could get the ground beef next time!
Excuse me? Did I just hear you ask me to buy more Mexican food?
I told him of course we would, while were are picking up the shredded pork for tostadas, Andddddddddd, since they are so easy to make, I decided that he is making dinner next time!
Sshhhh don't tell, I don't want to ruin the surprise!

Quick and Easy Shredded Chicken Nachos
- 1 bag of tortilla chips
- 3 cups cheddar/jack blended shredded cheese
- 1 (15-ounce) can of refried beans
- 1 package Hormel shredded chicken taco meat
- 2 tomatoes, diced
- Salsa, homemade or store bought
- Sour cream
- 4 green onions, chopped
- Preheat oven to 400 degrees F.
- Heat the refried beans in a small sauce pan over medium heat. Add a bit of water to thin the beans down so you can spoon them over the chips.
- Meanwhile, heat the taco meat according to package directions (I used the microwave method).
- In an oven safe pan or on a baking sheet lay half of the chips, top with half the beans, half of the taco meat, and half of the cheese, Repeat the layering; chips, beans, taco meat, and cheese.
- Bake in the oven for 5-10 minutes, or until the cheese is melted and gooey.
- Top with the diced tomato, salsa, sour cream, and green onions.
Yield: 4 to 6
Prep Time: 00 hrs. 10 mins.
Cook time: 00 hrs. 10 mins.
Total time: 20 mins.
