Hooooo lleeeeeee cow is is HOT! I mean like Death Valley hot! 

It has cooled down a teensy bit over the last couple of days, but the weather man said to not get happy about it because it is just a small reprieve. So we have been stocking up on our fave foods to beat the heat.

Of course all of the cooking gets done on the grill, because who wants to heat up the house? But I have been a busy bee, coming up with some cool sides to go with whatever you are cooking up (stay tuned for an AH-MAZING Asian Noodle Salad).

Speaking of the grill, poor Kevin has gotten stuck with the job of standing in the sun to cook all of our dinners. Hey, don't feel too bad for him, he is the one that claimed the grill as "his" area. But with the temps being in the 90's, something had to be done about that whole situation. Otherwise I was going to find him melted into a puddle in front of the grill! So I give to you our hillbilly cook shack.....

Meanwhile, as he was constructing the cook shack, I was busy inside making these sweet treats to cool myself down. We all loved the Easy No Churn Peach Frozen Yogurt I made a few weeks back. So I figured, now that I received my popsicle molds from Amazon (Yay Amazon!!), I would translate that recipe into a popsicle recipe. I just happened to have a bag of frozen mixed berries in the freezer so......fate people, it was fate.

I popped everything into my trusty ol' food processor, and away we went. I added a bit of water to the mix to thin it out and make it easier to get into the molds. I do have to admit that I do not have the whole "getting everything into the molds without making a mess" thing down. I had frozen yogurt all over me, the popsicle molds, the counter. Kevin came in and asked me what had exploded. 

My suggestions? Well, I used a spoon to push the mix into the bottom of the mold, and release any air pockets. That seemed to work because, as you can see, I didn't have any holes in my finished popsicles. But, that was how I made the mess. It kind of made the mix pop up at the top as the air pocket was released. I am thinking that using the handle might work, and be less messy. Or you could put the mix into a zipper top baggy, trim a corner off, and pipe the mix into the mold. I am going to give that a try next time. If you have a better way to do it please, please pleeeeeease, let me know what it is.

Now, today is G-baby Thursday *woot woot* soooooo y'all know I gotta share some cuteness with you right? Lil' Miss Kylee is starting to coo and smile, which of course causes me to just about explode from the cuteness. I was actually able to catch some of it on video, so without further adieu, I give you the adorable Miss Kylee....






I don't know about you, but that video puts a smile on my face every time I watch it! So, now that we are all in a good mood, let's make some of these fantabulous popsicles! I can't wait until I can share one with Kylee!!

Mixed Berry Frozen Yogurt Popsicles

Ingredients

  • 1 (16-oz.) bag frozen berries (or 1 lb fresh, frozen solid)
  • 1/4 to 1/2 cup agave nectar (or honey)* see notes
  • 1 cup plain whole fat vanilla Greek yogurt
  • 1 lemon, juiced
  • 2 teaspoons vanilla
  • Water (as needed)

Instructions

  1. Add the frozen berries, agave nectar, Greek yogurt lemon juice, and vanilla, to the bowl of a food processor. Process until no chunks remain, be patient it takes a while.
  2. Add water little by little to thin the mixture down to the consistency you need to get the mix into the popsicle molds.
  3. Spoon the yogurt mix into the molds, making sure to get the air bubbles out, add the cover and sticks.
  4. Place in the freezer for at least and hour.
Prep Time: 00 hrs. 20 mins.
Cook time: 00 hrs. 00 mins.
Total time: 20 mins.

* If you aren't sure how sweet you want the popsicles, add 1/4 cup of agave nectar at first, then taste and add more until you reach the desired sweetness.
