Turkey Sandwich with Zucchini Hummus and Grilled Peppers

You all know that I am a big fan of all things veggie. I live for the springtime so I can plant my garden, and take pictures of the growing goodies like they were my babies. This year I am going to give fall gardening a shot. I am keeping my fingers crossed that we will have some yummy fresh broccoli, cabbage, and squash to nosh on late in the year. There will hopefully be a whole new veggie family photo array for you to take a gander at. 

Once I have those gorgeous veggies in hand, I don't want to throw them into just any recipe. I am always looking for ways to really let them shine. For the most part we really love to grill or roast them. It just adds that little oomph to the flavor.

So when Foster Farms asked me to come up with a sandwich that would complement their new All Natural Sliced Turkey that has lower sodium, no nitrates/nitrites, steroids, chemicals or preservatives, and is 98% fat free, I knew I was going to head straight for the garden for my inspiration. I already had a plan, in my wee little brain, to make some "hummus" with grilled zucchini. I have been all about hummus lately and, watching my cute little baby zukes grow, I knew I somehow had to incorporate them into my hummus addiction.

Soooo let's recap here foodie folk. Grilled veggies + "zummus" + sliced turkey. Now, what else? Ok, how about some nice peppery arugula, muenster cheese (a current fave), and pile it all onto fresh Italian bread. That is a winner right there, I am tellin' ya!

Now, I had faith in my choices. 

I mean, how could that not taste good? 

What I was not expecting was exactly how good it would taste.

Hollllllly smokes people!! I never, I mean evvvvvvver, eat more than half of a sandwich at one sitting. It is just my thing. But not with this one! No how, no way. I was eating my whole sandwich and God help anyone that tried to stop me!

It is simple to enter:

#1 - Create a turkey sandwich using Foster Farms All Natural Sliced Turkey lunchmeat (Oven Roasted or Honey Roasted and Smoked) and any other fabulous ingredients of your choosing.

#2 - Post a photo of your sandwich to Instagram. In the caption, include the list of ingredients and tag @FosterFarms and #DontCallMeBasic. Make sure your profile is public!

Turkey Sandwich with Zucchini Hummus and Grilled Peppers

Fresh zucchini hummus and grilled peppers, paired with spicy arugula, creamy muenster cheese, and Foster Farms All Natural Oven Roasted Sliced Turkey, makes a sandwich that is anything but basic.

Ingredients
Equipment Used
Large Cutting Board
Chef's Knife
Cast Iron Grill Pan

Instructions
  1. Cut the top off of the bell peppers, then cut them into quarters removing the ribs and seeds.
  2. Heat a grill, or grill pan, to medium high heat. Grill the peppers until they begin to soften, and grill marks appear. Remove from the grill and allow to cool. Cut the grilled peppers into thin strips.
  3. Place a small handful of baby arugula on two slices of bread. Then add a layer of grilled pepper slices, 4 slices of turkey, and 2 slices of cheese. Spread 2 tablespoons of zummus on the remaining slices of bread and place them on top of the sandwiches. Cut in half and serve.
Yield: 2 sandwiches
Prep Time: 00 hrs. 15 mins.
Cook time: 00 hrs. 06 mins.
Total time: 21 mins.
