The reality of the holidays being here is smacking me right in the face like a big ol' hammer
How does this always happen? I am planning for the holidays, and am like "Ya, I see you over there holidays, I am totally ready for you".

It is less than a week away, and now I am in scramble mode!

Enter Chipotle White Bean Dip.....
Paired with my newest obsession, Food Should Taste Good Harvest Pumpkin Tortilla Chips because, well because food should taste good and these taste ding dang good!
I love them for sooooo many reasons. A- Helloooooooo pumpkin!! And then B they are made of super cool real foods like corn, pumpkin, and seasonal spices like cinnamon and nutmeg. It is the holidays all rolled into a delicious little chip that packs a ton of flavor.

Now, in my mind, spicy and sweet need to get married and live happily ever after in a little cottage in the woods. So, I knew immediately that I wanted to make something spicy to really accent the slightly sweet pumpkiny goodness of these chips. Last year I madeand it made my little (and tummy) very very happy. So I chose to revisit that tasty combo.
This dip is ridiculously easy, so it is perfect for holiday entertaining, and tastes so good you may want to hide it so you can eat it all yourself! But you have to pair it with these Harvest Pumpkin Chips so you can achieve the level of culinary bliss that I did!
Have a stress free holiday
Chipotle White Bean Dip
- 2 (15-ounce) cans cannellini beans, rinsed and drained
- 2 tablespoons chopped chipotle in adobo sauce
- 2 cloves garlic, chopped
- 1 teaspoon cumin
- 1 lime, juiced
- Kosher salt
- Fresh cracked black pepper
- Handful of fresh cilantro, reserve a few leaves for garnish
- 2 tablespoons olive oil
- Combine all of the ingredients in a food processor and process until smooth.
- Place the dip in a bowl and top with a few chopped cilantro leaves.
- Serve with Food Should Taste Good's Harvest Pumpkin Tortilla Chips.
Total time: 10 mins.
