As much as I want to believe that we are on the down slope of Winter, the reminders of the seasons least favorite offerings have been raising their ugly heads, or rather sore throats, cough, and fever. 

Yes my foodie friends, flu season has been kicking my butt. One by one it has been working it's way through the family, making us all miserable. 

First it was me dealing with the fabulous headaches, sneezing, and all over body BLEK. Then my darling Kevin came down with the cold weather crud.

Lately I have been feeling like there is not enough time in the day to get everything done that I need to get done. I feel like I am spinning in circles and at times getting nothing done! I know I have mentioned in the past that I have ADD, but I haven't really talked about how it effects me. I am sure several of you out there deal with the same thing. It is weird to be my age and say I have ADD. It just seems like a childhood/teenage thing doesn't it? But boy howdy does it sure kick my butt!! When asked to explain how it feels inside my brain, I tell people just think of working on a computer with 20 tabs open! Ya, that is my head on most days.....FUN!!

My daughter is a huge, and I mean huuuuuge tea lover. She loves teas of all flavors. For the holidays I almost always make a gift basket with different teas, cups, tea pots, basically anything "tea". But her hands down favorite tea is Earl Gray, and with my plan to get healthier in 2015 she has gotten me to switch my morning cup of joe for a healthy cup of Earl Gray. Yay team tea!!

My "original" hometown is not Seattle. I was raised a Southern California girl. But, as I have lived here for 8 years now, Seattle(ish) has become home to me. I used to miss the beaches and perpetual sunny days when I first moved to Western Washington, but now I revel in the lush green surroundings that are provided by those rainy Washington days. And before it seems that I am trying to say is Seattle = rain, can I just tell you that the summers I have spent here are some of the most glorious summers of my life? WOW is it beautiful!

It is like a big warm hug for my tummy, and always makes me smile. Even as I plan my healthy salads for the new year, I know I will never give up my creamy soup love. It might mean a few more minutes on the treadmill, but it is well worth it!

Is your family like mine? Complete food ball freaks addicts? Even my youngest has come around to our way of thinking this year and has gotten on board with the home-gating. She gets all fired up and, if we can’t be together for the game, will text me to comment on just about every play! But most of the time you will find us all gathered around the TV decked out in our finest team gear, with beads, baubles, and even the occasional face painting goes on.

It wasn’t always like this. Oh I have been a football fan since I was a teenager, but the rest of the family? Nope, that took a bit of work. One of the things that I used to love to do to try and get the kids excited about watching the game, was to make sure there were fun foods with “kid appeal”. I mean, hot wings and bratwurst aren’t exactly going to make the kids run to the table. Well, maybe some kids, but not most.



So fun food it was. Sometimes it would be fun things like peanut butter and jelly rolled up in a slice of bread and sliced to look like sushi, or other times it would be things they could do themselves, like a make your own English muffin pizza bar. They pile all the goodies on, you pop them under the broiler, and TADA their own personalized pizza. Simple yes, but the kids loved it. And most importantly it made them excited for game day. See, my mind is always working on getting to my goal, which would be a fun family football day!

Goldfish crackers were, and still are, one of their favorite snacks. If they didn’t have a little baggy of them in their lunches everyday they were not happy campers. My daughter used to say that their little smiles just made her happy, even if she was having a bad day. So it only seemed natural to incorporate them into a fun, kid friendly dish.




My local Walmart made it super easy for me to find the main ingredient for my cheesy fun finger food, by having it right smack at the end of the chip and popcorn isle.



It was even on rollback for $5.98, so I bought a box of the Flavor Blasted Xtra Cheddar too.



How many of your kids like chicken tenders? Mine begged for them at least once, if not more, a week. They love those super extra crispy fast food ones too. Ya, figure the odds that they were getting those a couple times a week! Nope, that wasn’t happening. But, it was what gave me the idea for these crunchy, cheesy little strips of smile inducing yumminess.  Take two of their favorite things, and combine them together. They loved them so much I had to make them for just about every game!

Now, they are all grown up, but they still love them. I have even made Cheesy Chicken Tender lover out of Kevin!! So go ahead and give them a try. You can even bring the kids in the kitchen to help make them. Just make sure you have plenty of Goldfish crackers on hand because, if they are anything like mine (Kevin included) they will be nibbling as away as they go

Cheesy Chicken Tenders

Cheesy Chicken Tenders

Ingredients

  • 8 chicken tenders
  • Kosher salt
  • Fresh cracked black pepper
  • 1 cup fat-free Greek yogurt
  • 3 cups original flavor Goldfish crackers, crushed

Instructions

  1. Preheat oven to 350 degrees F and line a baking sheet with foil
  2. Place the Goldfish crackers in a zipper top bag and seal it. Using a rolling pin, roll over the top to crush them. Make sure to leave some texture (like panko bread crumbs)
  3. Salt and pepper the chicken tenders and then dip them in the yogurt, be sure to coat both side evenly, then place the chicken in the Goldfish cracker crumbs mixture pressing to make sure to coat both sides.
  4. Place tenders on a foil lined baking sheet. Bake at 350 for 25-30 minutes or to an internal temperature of 165 degrees F.
Prep Time: 00 hrs. 10 mins.
Cook time: 00 hrs. 30 mins.
Total time: 40 mins.

Today I am guest posting for my friend Tara over at Noshing with the Nolands. She is cruising away on vacation, and I am stuck here in gray, drizzly, Washington. But I can't be mad. I just wish I was with her. You see Tara and I have "known" each other for a couple of years through our blogs. We are both part of Sunday Supper so I have drooled over quite a few of her recipes. Check out her Tamale Pie (y'all know I am a sucker for Mexican food!), Potatoes Dauphinoise (hello creamy cheesy goodness!), and Leftover Turkey, Sausage Enchilada Casserole (I know, more Mexican, I can't help myself!). But since we ate drank and were merry over the holidays, I figured that something healthier would be a good idea. Hence a nice tasty healthy breakfast of Potato Hash with Spinach and Roasted Red Peppers.
