Smart Snacking with Pistachios #FoolYourselfFull

This April Fools’ Day, play a prank on your appetite and fool yourself full with pistachios!

Smart Snacking with Pistachios #FoolYourselfFull

Hello, my name is Bobbi and I am a snacker. It can be really bad because I am an absent minded snacker AND a bored snacker.

Absent minded comes into play when I am sitting at my computer working (which is most of the time) and I get hungry. It is so easy to just grab a big bag o' something and take it to my desk. There I continue to munch, handful by handful, until OOPS the bag is empty. Uhh Oh! How much did I just eat?

How many calories were in that?

Yikes!

Asian Style Salmon Burgers with Hoisin Mayo and Spicy Sweet Potato Fries

Asian Style Salmon Burgers with Hoisin Mayo and Spicy Sweet Potato Fries - Asian flavors come together to make this salmon burger light and bright and simply irresistible!

Has spring sprung where you are yet? It is trying it's darndest to here! We went from cold, gray, and drizzly everyday, to sunny and mild one day, cold and gray and drizzly the next. It is weather by Sybil right now, and the weatherman has no clue. On the days he says it will be sunny you can just about count on rain. But nevertheless, when the tease of spring shows up around here my mind goes to all things burger. Whether it is from the grill or my skillet, visions of meaty little patties snuggled between two toasty buns make me oh so very happy. It is a true obsession actually. I start wanting to throw everything on a burger, top it with a bun, and shove it in my face. Oh, I have it bad!!

Garlic and Ginger Pickled Cucumbers

Garlic and Ginger Pickled Cucumbers - Fresh cucumbers quick pickled with garlic and ginger creates a lovely tangy lightly pickled flavor with a bit of an Asian twist.

Pickles bring back memories of summers from my childhood. It isn't that fresh pickles were readily available. Like I have said in the past, my Mom wasn't much into the whole cooking/domestic side of the game. No it is because, as a teenager, summer meant hanging out at the beach all day with your friends. Of course at some time during the day we would get hungry, but the girls didn't want to fill up on the Mexican food that was readily available. I mean literally, the restaurant was right on the boardwalk. Walking around a bathing suit tends to make you a bit conscious of the calories you are putting in your body. Although my taste buds craved rolled tacos and carne asada nachos, my bikini screamed at me to back away from that table ASAP!

Roasted Baby Artichokes with Lemon Garlic Dipping Sauce

Roasted Baby Artichokes with Lemon Garlic Dipping Sauce - Tender baby artichokes roasted to perfection and served with a tangy garlic lemon dipping sauce is possibly one of the best to celebrate spring!

Roasted Baby Artichokes with Lemon Garlic Dipping Sauce from www.bobbiskozykitchen.com

A friend of mine and I went to a farmer's market the a little over a week ago. I was super excited because I haven't been to a decent farmer's market since I moved from So Cal. Unfortunately we were a bit early it seems because there weren't very many vendors there. I was on the look out for springy type produce to work with and, well spring just hasn't seemed to have sprung here yet.

I did talk to a very nice guy that sells jams and jellies from Johnson Berry Farm. We sampled a few of their pepper jams (you know I like it hot people), and I settled on one they consider "Xtra-Hot", their Golden Raspberry Habenero XXX jam. They do have two jams that have ghost peppers (yes I said ghost peppers) in them, but I didn't have the nerve to give them a try. I will suck it up and do it next time though because even though the habenero jam was hot, it wasn't OhhEmmGeeee hot so I think I will be able to handle it.

Now you all chant "Do it, do it, do it" and then I will feel sufficiently pressured into it. Then, if something goes sideways, I can just blame it on you. Hey, what are friends for right?

Chicken with 100 Cloves of Garlic (Yes, I said 100)

It may seem like a lot of garlic but trust me, it will give you juicy chicken with the most delicious sauce. You won't want to waste a drop of it!

Chicken with 100 Cloves of Garlic Recipe found on BobbisKozyKitchen.com

Highlights of this post:
  • I should not be allowed to wander aimlessly through a grocery store
  • You can peel a whole head of garlic in seconds
  • Garlic is good for more than chasing away vampires

A couple of weeks ago, my kids and I made a little road trip to check out a store that I haven't been to in probably 7 years now. I guess road trip is stretching it a bit. It is only about an hour away (about the same as Seattle if you go the other way). But for me, the girl that hates to drive? It might as well be on the moon! I love to travel, just hate the whole driving thing. So the task falls to Kevin, or my son, or anyone else that I can con sweet talk into taking the job.

Reuben Mac and Cheese @GalloFamily #SundaySupper

Creamy Mac and Cheese meets a Reuben and has the most delicious baby ever!

One of the things that I love so much about food is that certain dishes can evoke memories that we might not otherwise think about. The smell of fresh baked bread takes me right back to my Grandmother's kitchen. I am probably 8 years old, and it is Christmas time. I can vividly remember the brown and orange tile (woohooo 70's), the oven mitts that hung from a hook on the wall, and those big ol’ bar stools that I was so determined to climb alone. It is like I am right there and I could reach out and touch my Grandma's apron!

Slow Cooker Turkey Dip Sandwiches

Juicy herbed turkey breast with melted cheese and crusty bread, dipped in a wonderfully flavorful au jus. What is better than that, except maybe that it is done in the slow cooker!

God bless my slow cooker. I seriously can not believe that I left it unloved, on a pantry shelf, for so long. What was I thinking? I judged, and labeled, and allowed myself to put you into the cliche category that brought to mind visions of heavy condensed soup laden dishes. Please forgive me dear slow cooker, I hang my head in shame.

Healthy Green Goddess Dip #SundaySupper

Green Goddess Dressing is a true retro food, dating back to 1923. This lightened up dip version brings all the fresh flavor into the 21st century and leaves the calories and fat to history.

This week the Sunday Supper theme is "Retro Food". You know, the dishes that transport you back to years gone by? Or maybe that funky dish that Aunt Mary used to bring to the family potlucks, the one you avoided at all costs? Or better yet, that heavy condensed soup laden dish that (my Mom) used to serve just about every week? Yup, that's the stuff!

Reuben Sliders (with Slow Cooker Corned Beef)

Make these tasty little sammies for your St Patrick's Day festivities. They are cute, tasty, and sure to please your guests! BONUS is that you make the corned beef in your slow cooker for set it and forget it preparation.

I get so excited when St Patrick's Day gets close. Why? Well possibly I am an overgrown kid that loves to dress up and pinch everyone that isn't wearing green, didn't you hate it when your Mom forgot it was St Paddy's Day and sent you to school without green on?
