Cinco de Mayo is right around the corner and you all know that is a big deal in with me. Growing up in Southern California, it was a holiday that we ALL celebrated. Good food, and lots of it, was always consumed no matter where I was. So lately my house has been full of Mexican inspired dishes. I love coming up with new recipes for the blog PLUS we all know my obsession love of Mexican food is a year round thing. But that enthusiasm is not exactly shared with the man in my life, so Cinco de Mayo gives me the licence to go crazy with it, no matter what he thinks (that would be a big nanny nanny boo boo right in his face hehe).

With Cinco de Mayo on the horizon, I knew I needed to step up my game and get some Mexican food on the blog. Looking back, it seems like forever since I posted any which, for me, is crazy to think of. I used to make Mexican food 2 to 3 times a week and if you search the blog you will find a TON of Mexican inspired recipes. I just can't help it. I am addicted to it! I grew up in Southern California so Mexican food is all but in my blood. Butttttttttttt I now live with someone that isn't a huge fan, so I just don't make it as much as I used to. Ha, just wait for the next week or two, that will change! I may be gorging myself on leftovers, but I will be a happy happy girl!!

You would think that I would start ahead and maybe not stress out so much, but that is too logical so of course that is not what I do. Oh the things I put myself through that make me crazy!!

Sunday Supper is celebrating National Grilled Cheese Month today! Did you know that April is National Grilled Cheese Month? Yup, that’s right, an entire month devoted to melted, gooey, cheesy goodness. Oh be still my little foodie heart! I really think there is no other food that stirs as many memories for people as much as grilled cheese (mac and cheese runs a close second I think). So many people refer to grilled cheese as a comfort food, and that it takes them back to being a kid. I know I have SO many memories of grilled cheese and tomato soup dinners.

I don't know about you, but I always have a ton of leftovers at the holidays. Thanksgiving, Christmas, Easter, it is always the same. I always make more than we really need. But I think that is the fun of cooking holiday meals. Having those leftovers to nibble on for the next few days. Cheesy Salsa Chicken and Couscous Casserole is the perfect weeknight meal made with boneless chicken tenders, salsa, couscous, and lots and lots of cheese! 

I watch a ton, and I mean a TON of food TV. It is on pretty much 24/7 at my house and one of my favorite shows is Chopped. I love trying to figure out what I would make with the ingredients in their baskets. I have to admit sometimes, oh who am I kidding a LOT of the time, I am stumped. I mean what do you do with pork tenderloin and black licorice? Yikes! I love them both, but not together!
