So there is this girl that is kinda strange. She can eat the same thing everyday, a kabillion days in a row, and be super OK with it. Weird right?
Well, that weird girl is me (Duh right?), and the food I ate a kabillion days in a row was this chicken salad. I.Kid.You.Not! A kabillion, I counted!
But seriously here folks. How could you NOT eat this chicken salad everyday for like, oh I don't know, EVER? Oh wait, that's me.
OK, work with me here though.
- Chunks of juicy chicken
- Glorious red grapes
- Tart Granny Smith apples
- Crunch from celery and walnuts
- Chewy little craisins
- A little spice from red onion
- All made harmonious with some Greek yogurt, lemon, salt, and pepper.
It is soooo humble, sooooooo easy, and soooooo good!

Oh wait, we didn't even touch on the fact that this is S-K-I-N-N-Y
Yup, you see a traditional Waldorf salad is loooooooaded down with fat and calories thanks to mayonnaise, umm helloooooooo 1495 calories and 165 grams of fat per cup Uh ya, I am not joking here peeps! Some recipes call for up to 1 1/2 cups of mayo!! Holy shizzzz!
Let's welcome Mr Nonfat Greek yogurt to the party shall we? He comes with 130 calories in his cup.

I am not very good with math, no really, I am horrible at it! Thank God my phone has a calculator!
So let me whip out said calculator...*drum roll* by using the nonfat yogurt vs the mayo, ummm we are saving our rears about 91% of the calories, and 100% of the fat!
Oh haaii my jeans that have been banished to the corner because they hurt my feelings when I put them on after the holidays.

Skinny Chicken Waldorf Salad
Lose the fat and calories, without losing the flavor, with this creamy skinny chicken salad.
- 2 boneless, skinless chicken breasts, poached and cubed
- 1 cup nonfat plain Greek yogurt * see Cook's note
- 1 cup seedless red grapes, halved
- 1 stalk celery, diced
- 1 lemon, juiced
- 1/2 cup chopped walnuts
- 1/4 cup dried cranberries
- 2 small Granny Smith apples, finely diced
- 1/2 small red onion, finely chopped
- Kosher salt
- Fresh cracked black pepper
- In a large bowl, combine all of the ingredients, season with salt and pepper to taste.
