Oh my stars! Do you see that gorgeous bowl of creamy deliciousness right there?  

Yes, yes of course you do. BUT do you really realllllly see how fantabulous it is? *sigh* oh how I wish for smell-o-vision and taste-o-vision when it comes to this soup!

I know that spring is waving hello from the horizon, and we all have visions of BBQs and picnics dancing in our heads. But I am here to tell you that you do not want to pack away that desire for warm, luxurious, tummy hugging soups yet. At least not until you have tried this luxurious tummy hugging soup!

I am serious; it is a life changer....no joke! It changed Kevin BIG TIME.

You see, well you all know that he can be Mr. Doubtful when it comes to certain things, and a meal without meat is one of those things. He will grumble and complain as soon as he hears I am making something that doesn't include something to quell that carnivorous beast that is within, and when he heard that this soup was on the menu it was the same. 

Oh ye, of little faith! When have I ever failed to please? OK well there was that one time, but everyone else loved the meal so I blame that one his taste buds, not me.

Anywho, back to this soup.

It is so velvety smooth, and creamy good. I could seriously bath in it.

Too weird? 

Ya, I kinda thought so too, so I had to settle for consuming as much of it as humanly possible over the last two weeks. My slow cooker has been working overtime baby!!

One of the things that makes this soup so amazing, aside from how delicious it is, is how simple it is to make. It is pretty much just a dump and go recipe really, and that is thanks to Cascadian Farm's frozen veggies. You only have a bit of garlic, celery, and onion to deal with.

Slow Cooker Red Curry Lentil Soup

Slow Cooker Red Curry Lentil Soup

A hearty warm, luxurious, tummy hugging soup, with just a hint of curry spice to tantalize your tastebuds.

Ingredients

  • 1 10-ounce package Cascadian Farm Winter Squash
  • 1 10-ounce package Cascadian Farms Peas and Carrots
  • 3 large stalks celery, chopped
  • 1 onion, chopped
  • 5 cloves garlic, minced
  • 2 cups lentils 
  • 8 cups vegetable stock
  • 5 tablespoons red curry paste
  • Kosher salt
  • 3 cups baby spinach
  • 1 cup parsley, chopped (plus extra for garnish if wanted)

Equipment Used

Instructions

  1. Place all ingredients in the slow cooker. Cover and cook on low for 7-8 hours.
  2. Remove the lid and blend with an immersion blender, or transfer the soup, in batches, to a blender. Blend until your desired consistency (I like it nice and smooth).
  3. Top with extra parsley, shaved Parmesan, pine nuts, etc...let your imagination take you!
Yield: 6 to 8 servings
Prep Time: 00 hrs. 15 mins.
Cook time: 08 hrs. 00 mins.
Total time: 8 hrs. 15 mins.

Sooooo sorry that I have been absent the last few days my friends! I didn't post Sunday OR Tuesday. *hanging head in shame*  30 lashes with a wet noodle for being a bad food bogger!!

I will blame a portion of the absence on my wonderful *koff* *koff* cable company. The internet went out Saturday, and of course they couldn't make it out until Monday. I guess I should be thankful that is was Monday not Wednesday, and that it was an AM appointment.

Italian Style Skillet Pie

The other day I was watching Symon's Suppers on The Cooking Channel. I adore Michael Symon! I love his sense of humor, his talent, how energetic he is.... 

WOW am I gushing? 

Ya, I think he is kinda sexy too, but that might just be a foodie thing.

Anyway, I love watching his show. I am always finding things I want to make as soon as possible. He always seems to mix up flavors and give you little surprises here and there. When I saw this dish on his show I liked the sound of it. I had made the potato/cauliflower mash he used for the topping of the pie before and loved it.  

I also loved that it was a "One Pot" meal so I wouldn't have a ton of dishes to do after dinner. Also, it is a bit of a twist on Shepherd's Pie, which is a favorite here.

Ooohhh here comes the rain  I know, not a shocker for Western Washington, but it has actually been pretty mild lately. Chilly, but we have had a respite from the  days, and daaays of rain we had been having. I was seriously beginning to think I should start building an Arc 

But today I am sitting on my sofa, looking out the window at the clouds and watching the rain fall on my deck. 

It really isn't that bad though. Sometimes it is actually relaxing to watch the rain fall, but when it has been here for more days than you can remember? Ya, then it grates on the nerves a bit
