Creamy Slow Cooker Red Curry Lentil Soup

Slow Cooker Red Curry Lentil Soup - A hearty warm, luxurious, tummy hugging soup, with just a hint of curry spice to tantalize your tastebuds from www.bobbiskozykitchen.com

A big thanks to Cascadian Farm for sponsoring this post!

Oh my stars! Do you see that gorgeous bowl of creamy deliciousness right there?

Yes, yes of course you do. BUT do you really realllllly see how fantabulous it is? *sigh* oh how I wish for smell-o-vision and taste-o-vision when it comes to this soup!

I know that spring is waving hello from the horizon, and we all have visions of BBQs and picnics dancing in our heads. But I am here to tell you that you do not want to pack away that desire for warm, luxurious, tummy hugging soups yet. At least not until you have tried this luxurious tummy hugging soup!

I am serious; it is a life changer....no joke! It changed Kevin BIG TIME.

You see, well you all know that he can be Mr. Doubtful when it comes to certain things, and a meal without meat is one of those things. He will grumble and complain as soon as he hears I am making something that doesn't include something to quell that carnivorous beast that is within, and when he heard that this soup was on the menu it was the same.

Oh ye, of little faith! When have I ever failed to please? OK well there was that one time, but everyone else loved the meal so I blame that one his taste buds, not me.

Anywho, back to this soup.

It is so velvety smooth, and creamy good. I could seriously bath in it.

Too weird?

Ya, I kinda thought so too, so I had to settle for consuming as much of it as humanly possible over the last two weeks. My slow cooker has been working overtime baby!!

One of the things that makes this soup so amazing, aside from how delicious it is, is how simple it is to make. It is pretty much just a dump and go recipe really, and that is thanks to Cascadian Farm's frozen veggies. You only have a bit of garlic, celery, and onion to deal with.

PLUS the extra super duper cherry on top to the whole dealio is that Cascadian Farm products are 100% organic. Yay!! Y'all know how I feel about that particular subject. I also love that they care about the health the people, and of the planet.

Cascadian Farm started out as a real farm, here in Washington, and their founder had a dream to produce quality products, all the while taking care not to damage the environment. He wanted to make sure that the resources of today stay available for generations to come. They have now branched out, and are pioneers in the movement to convert conventional farms to the organic way of doing things.

And that my dear foodie friends makes is easy for me to stand behind them, annnnd makes Cascadian Farm Organics my new BFF!

Plus they are from Washington too, woot woot let's hear it for Washingtonians!!

I have to say that my kiddos, after tasting this soup, wanted to raid my freezer. But I told them they had to go buy their own veggies, these are MINE! I am to addicted to my daily smoothies and soup!!

I was nice enough to send home a few containers of frozen soup (this freezes beautifully), I am such a softy!

Oh, BTDubs, March is National Frozen Food Month, so get out and stock up on some of Cascadian Farms Organic frozen veggies and fruits. Just make sure to keep my kids out of your freezer

  7. That was SUPER kind of you to allow some leftovers to leave your house. I'm not certain I'd be so.... generous. I totally wish for smell-o-vision and taste-o-vision too. I had no idea cascadian farms did frozen veggies. Doh. I was aware of a cereal and granola bar line, and LOVE those. I'll check them out next time I'm in the store's frozen section (so, like, later today...).

Great post, great recipe - thanks for sharing!

  12. I'm always on the lookout for slow cooker recipes that can stay all day. This sounds so good! Yay for frozen veggies! Frozen butternut squash is so convenient, compared to prepping a fresh one.

  18. Bobbi you are cracking me up with this! It took awhile but I got my carnivorous man to enjoy the occasional meatless meal. If I bat my eyelashes would you let me raid your freezer for this soup because it sounds exactly like something I would gobble up!

    1. Thanks Rose :) I am always shocked when I can get him to accept a meatless meal, and was sooooo glad that this was one of them. It helped that it reminded him of his fave, split pea soup. I am a sucker for batting eyelashes (just ask my daughter) so I suppose I will share just a bit with you haha!
