Dill Pickle Coleslaw

Ohhhh spring is in the air my foodie peeps! We have had sunshine , and blue skies, the flowers are blooming , the bees are buzzin' , and my craving for BBQ food is in high gear 

You have to understand that when the temps are above 70, and the sun is out, we pretty much live outdoors. It is a Washington thing, we just want (and need) to soak up as much of that vitamin D goodness as possible so we can store it away for the literal rainy days.

And, when we are outside, it means we put our grill to work double time with things like Buffalo Chicken Burgers, BBQ Chicken, Grilled Ribeye Steaks with Jalapeno Chimichurri, and any and all things that can be grilled, smoked, or slathered in sauce. There have even been a few hot dogs tossed in there for good measure in the form of Reuben Dogs, and BLT Hot Dogs. Oh yessssss!

Oh and BTDubs, I figured out how to play Pandora through my TV with my TIVO box, so no more boom box for the BBQs! Woohoooo lookie me all gettin' with the 21st century and stuff 

Now if I could only figure out the bells and whistles on my smart phone

Anywho, let's get back to the food shall we?

Yes, let's!

Well, one of my favorite BBQ/picnic sides is coleslaw. I have loved it since I was a kid, and don't even get me started on the several year addiction I had to the Colonels version UGH!! I think I ate it by the gallon!

But, now that my palate is a teensy bit older *koff koff*, as is my rear end, I decided I wanted to cut out as much fat and calories from my fave. So I pulled out the ol' thinking cap, and sat down to think.

Does anyone else have the image of Pooh bear tapping his head saying, "Think think think"?


Yup, that is pretty much what it looks like when I try realllllly hard to focus. 

OK, so part of it was a no brainer for me. I sub Greek yogurt for sour cream and mayo in just about everything anymore.

Mayo - OUT 

Greek yogurt - IN

CHECK!

Now, what to do to make a bit more zippity do dah. KFC's has a TON of sugar (hence the yummy numminess right) so if we take flavor out, we gotta put flavor in.

I don't know about y'all, but two of my favorite meals to mow down some coleslaw with are fried chicken and pulled pork. I got to thinking, what goes with both of those things?

DILL PICKLES! 

If you have never had dill pickles on a fried chicken sandwich you have got to try it ASAP.

So dill pickles it was. 

The first thing we tried this on was my Big Pig Burgers. OhhhEmmmGeee people! It was heaven on a toasty bun  and you know what?

Yup, you guessed it. Kevin, who has told me on numerous occasions that he is NOT a pickle fan (He always pulls them off his burgers), L O V E D it #IamTheShizz

And of course I wanted to eat the whole bowl! But, since the kids were here for dinner, I refrained from doing so.

I just made another batch the next day and proceeded to go to town

If you are looking for the perfect coleslaw to compliment that BBQ pork you have found it! Creamy, and delicious, with the zip of dill pickles.

Ingredients

  • 1 bag coleslaw mix
  • 1/4 cup plain Greek yogurt (recommended Greek Gods)
  • 1/2 small onion, grated
  • 1/2 cup dill pickle relish
  • 2 tablespoon granulated sugar`
  • 2 tablespoons white vinegar
  • 1 tablespoon dry mustard
  • 2 teaspoons celery salt
  • Kosher salt
  • Fresh cracked black pepper

Equipment Used

Instructions

  • Combine all of the ingredients and toss together until the cabbage is well coated.
Prep Time: 00 hrs. 10 mins.
Cook time: 00 hrs. 00 mins.
Total time: 10 mins.
Servings: 4

  1. I had to come and check out the recipe. My mom-in-law makes her cole slaw with pickle juice. Your recipe sounds so much better. I'll have to make it and compare.

    1. I had heard about people subbing pickle juice for the vinegar, but I wanted an IN YO FACE pickle experience LOL I am super excited that you are going to give it a try!!
