I realized that I haven't posted a cocktail recipe in, well in forever really. 

I used to have a weekly post called "Tipsy Tuesday", but I have to admit that I cheated a bit with that. You see, my son lived with us, and he was a bartender, a bombtastic bartender at that, so recipe development pretty  much consisted of him creating, me tasting, and WALA a new cocktail was born, and posted.

Now, well I am pretty boring. Coming up with new cocktails always sounds like a great idea, but when it comes down to it I just tend to grab a bottle of wine and go with that. 

Simple and easy? 

Ya sign me up for that!


But the weather has really been pretty amazeballs lately, lots of blue skies and warm temps. So we are spending more and more time with friends and family on the back deck, or around our fire pit. 






I really got inspired to come up with a refreshing and delicious adult type beverage. 

I mean, you can have fun with a cold beer, or nice glass of wine. But, I have to say that once you have one of these bad boys in your hand, the party factor just seems to increase by leaps and bounds.

A little twist to the classic mojito, this blueberry version might just become your new favorite!

Ingredients

  • 8 blueberries, plus a few for garnish (I used Cascadian Farm Organic frozen blueberries)
  • 6 to 8 mint leaves, plus a couple for garnish
  • 3 ounces lemon lime soda
  • 2 ounces Bacardi Limón
  • 2 lime wedges

Equipment Used

Instructions

In a cocktail shaker, muddle the blueberries, mint, and 2 lime wedges, with a splash of the soda.
  1. Fill the shaker with ice, and add the Bacardi and lemon lime soda. Shake together, pour into glasses.
  2. Garnish with mint sprigs and extra blueberries.
Yield: 2 servings
Prep Time: 00 hrs. 05 mins.
Cook time: 00 hrs. 00 mins.
Total time: 5 mins.
