Friends, this Sheet Pan Pork "Saltimbocca"  just makes me smile 

#1 - I love the fact that saltimbocca actually means "leap into the mouth" in Italian. Which, is very fitting since I pretty much shoveled it into may face as fast as humanly possible.

#2 - It is so easy to make, comes out perfect every single time. So I feel like I am doing something right.

Number 2 is important because I am currently failing, epically, at gardening 

Well I guess epically is a bit dramatic since I do have 4 tomato plants, and 3 zucchini plants. But I have managed to murder 4 spaghetti squash plants, 3 zucchini, and several pole beans #blackthumb


I am trying to figure out why. I mean I have 4 tomato plants that seem to be (keyword seem) doing well. They are green, and bushy, and very strong. There are a few brownish leaves at the bottom, but everything else looks great. However, they are in the same bed that the now deceased spaghetti squash were planted. It just baffles me 

I was told to add some lime, so I guess that is my next step before I plant all of my lovely little sprouted beet plants. #wishmeluck

So, what do I do when life gives me a dead garden? 

Well, I cook, of course! 

However, unless Kevin is volunteering to handle cleanup duty, I do not want a butt load of dishes to deal with. Dirty dishes do not equal happy camper. So I go to my new BFF, the sheet pan dinner  

Seriously people, if you haven't jumped on the sheet pan band wagon yet give me your hand and let me pull you aboard!

There is something so freeing about slapping a couple veggies and some meat on a pan and tossing it in the oven. No fuss, no muss, and NO stress! 

I mean, I am already stressed out about the damn garden  the last thing I need is dinner to make it worse!

Sheet Pan Pork "Saltimbocca"

Simple, and delicious, this Sheet Pan Pork "Saltimbocca" is the perfect easy weeknight meal!

Ingredients

  • 2 onions, cut into 1/2-inch-thick slices
  • 3 tablespoons olive oil, divided
  • Kosher salt
  • Fresh cracked black peper
  • 1 1/2 pounds baby Yukon Gold potatoes, cut in half
  • 1/2 cup fresh sage leaves, chopped
  • 1 (2 pound) pork loin roast cut into 4
  • 8 thin slices prosciutto

Equipment Used

Instructions

  1. Preheat oven to 450°. Line a large rimmed baking sheet with foil.
  2. Place onions on the baking sheet and drizzle with 1 tablespoon of olive oil, and season with salt and pepper. Toss gently to coat without breaking up slices.
  3. Combine remaining 2 tablespoons olive oil, potatoes, and sage in a bowl; season with salt and pepper and toss to coat. Place potatoes on the baking sheet.
  4. Roast onion-potato mixture until potatoes are beginning to brown around the edges, about 20 minutes. Stir the onions and pork with tongs to carefully separate the onions, and make room for the pork.
  5. Season pork with salt and pepper and top each pork steak with 2 prosciutto slices. Place pork on baking sheet atop potatoes and onions. Roast until an instant-read thermometer inserted horizontally into center of pork registers 135, 10 to 15 minutes.
  6. Turn the broiler to high and broil for 2 to 3 minutes to crisp up the prosciutto.
  7. Let rest for 5 to 10 minutes.
Yield: 4 servings
Prep Time: 00 hrs. 10 mins.
Cook time: 00 hrs. 30 mins.
Total time: 40 mins.

  2. I like this recipe . I think it will be better to use cookware set to make this type of cake . I also try to make it by using cookware set because it helps not to cling with utensils and gives a proper shape for decoration .proper decoration helps for eating .
