This One Pot Chicken Caprese Pasta is quick and easy and just may be my new fave one pot dish. I am not sure, but it is a least currently my fave #iamfickle

I know I have been slow to really get into the whole one pot, or "Wonder Pot" meals, but hey, that's how I roll.  I am always a day late, and a dollar short. 

Where the heck did that saying even come from anyway? 

Don't you ever wonder where those sayings that your parents or Grandparents used all of the time came from? One of these days I need to sit down and Google all of that shizz!

Anywho, this recipe is easy peasy lemon squeezie gang! Just like the title suggests. It all goes in one pot and bing bang boom dinner is done man!! I may just try to figure out how to cook everything I make either on a sheet pan, or in one big ol' pot!

I guess that means I need to start working on some dump and run slow cooker meals too huh? OK, OK, I will break out the thinking hat and try to crank this old brain over.

Now, look at the gorgeous pot of yumminess right there! That is one sexy pasta dish, at least to me it is. Isn't there something sexy about pasta in rich tomato sauce and topped with plenty of parmesan cheese? 

Please say I am not the only one that finds that sexy!

I was also uber excited about the fact that those are tomatoes from my garden, and basil from my greenhouse window #nerdingout 

But even if you don't have a garden to geek out over like me, this meal can be in front of your family in just about 30 minutes!

Let the kids rock/paper/scissors over who gets to wash the pot

Yield: 6 to 8 Servings

One Pot Chicken Caprese Pasta

This One Pot Chicken Caprese Pasta is quick, easy, and oh so delicious. Bonus - only one pot to clean!
prep time: 10 MINScook time: 20 MINStotal time: 30 mins

INGREDIENTS:


  • 2 tablespoons olive oil
  • 1 pound boneless skinless chicken breast, cut into 1-inch cubes
  • 1 onion, chopped
  • 3 cloves garlic, minced
  • 16 ounces whole wheat rigatoni (or other short cut pasta)
  • 1 (28-ounce) can crushed tomatoes
  • 6 sticks of string cheese, cut into 1/2-inch pieces
  • 1 pint grape tomatoes, halved
  • 1 teaspoon dried oregano
  • Kosher salt
  • Fresh cracked black pepper
  • 1/4 cup balsamic vinegar
  • 3 1/2 cups chicken stock
  • A good sized handful of fresh basil leaves, cut chiffonade (save some for garnish)
  • Grated Parmesan cheese for garnish

INSTRUCTIONS


  1. In a dutch oven or large saucepan, saute chicken, onion, and garlic in olive oil over medium-high heat until veggies are tender and chicken is no longer pink. Add the remaining ingredients, except the parmesan cheese, stir to combine.
  2. Bring to a boil over medium-high heat, then reduce to a simmer and stir well. Cook uncovered, stirring occasionally until the pasta is done, about 20 to 25 minutes.
  3. Taste and adjust seasoning if needed.
  4. Serve topped with basil and parmesan cheese.
