    Cauliflower Hash: The Low-Carb Breakfast You Didn't Know You Needed! 🥦🍳

    We've been doing family brunch Sundays lately, and I decided to sneak in a new dish to the lineup: Cauliflower Hash. Before you can say "cauliflower what?" I guarantee you'll love it just as much as the original.

    How can I be so confident? Because I've already served this low-carb, gluten-free dish to my hubby and daughter, and they raved about it before I even revealed the secret ingredient.

    I guess I shouldn't have been too surprised. Kevin fell in love with my Shrimp and Bacon Cauliflower Fried Rice, Easy Cauliflower and Cheese Soup, and German Cauliflower Salad. He's even enjoyed a zucchini rice dish and zoodle dish that will be on the blog soon, I pinky promise.

    Miss Picky Pants has even fallen for my Beef Zoodle Stir Fry. What kind of alternate universe am I living in??

    Of course, it doesn't hurt that I added a gorgeous sunny-side-up egg to top it off, right? I mean, how can you go wrong with a warm, delicious egg yolk running all over your plate?

    You CAN'T, that's how!

    Yes, I am one of those people—the let's-add-an-egg-and-possibly-bacon-to-everything kind. But I will tell you that this Keto Cauliflower Hash is good with or without an egg on top. So, for my vegan peeps, this dish is for YOU.

    Psssttt, for my naughty friends or those of you desperately trying to get a family member to eat cauliflower, you can sub bacon fat for the olive oil. Hellooooo heaven!

    But you didn't hear that from me!

    🥘Cauliflower Hash Ingredients

    These are the ingredients necessary to make Cauliflower Hash.

    • Cauliflower - When choosing a head of cauliflower for this dish, look for one that is firm, white, and free of dark spots, with fresh, green leaves still attached to ensure optimal freshness and flavor.
    • Turnips - When selecting turnips, opt for small to medium-sized ones as they tend to be sweeter and less fibrous, ensuring a more pleasant texture and taste.
    • Onion - I use a yellow onion for this but you can use white, yellow, or purple, whichever you prefer.

    Helpful Hint: 💡: If you don’t have a microwave or prefer not to use it, you can peel and cube the turnips and parboil them in salted water for 3 to 4 minutes. Make sure to drain them well or they won’t brown properly in the skillet.

    SUBSTITUTIONS

    • Turnips- Swap turnips for rutabaga, radish, celery root, or more cauliflower.
    • Onion - You can use yellow, white, purple, or even green onion in this recipe, whichever you prefer.
    • Olive Oil - Avocado oil, coconut oil, or bacon fat if you are not vegan.

    • Sausage Delight - Add cooked and crumbled sausage for a heartier, meaty dish.
    • Mushroom Magic - Incorporate sautéed mushrooms for an earthy flavor and extra texture.

    Storage

    1. Refrigerator: Allow the cauliflower hash to cool completely before transferring it to an airtight container. Store it in the refrigerator for up to 3-4 days. To reheat, simply warm it in a skillet over medium heat until heated through, or microwave it in short intervals, stirring occasionally.
    2. Freezer: For longer storage, you can freeze the cauliflower hash. Spread the cooled hash in a single layer on a baking sheet and place it in the freezer until frozen solid (about 1-2 hours). Once frozen, transfer the hash to a freezer-safe container or a resealable plastic bag. Label the container with the date and store it in the freezer for up to 2 months. To reheat, thaw the hash in the refrigerator overnight and then heat it in a skillet over medium heat until warmed through.

    Is there a substitute for turnips in this recipe?

    If you prefer not to use turnips, you can simply omit them and use extra cauliflower instead. Alternatively, you can replace the turnips with another root vegetable such as rutabaga or radish.

    Can I make this recipe vegan or vegetarian?

    Ingredients
      

    • 1 lb turnips * See Notes
    • 2 tbsp olive oil or bacon fat
    • 1 head of cauliflower cut into small pieces
    • 1 red bell pepper diced
    • 1 onion diced
    • 2 cloves garlic minced
    • 1/4 tsp cayenne pepper
    • Pink salt to taste
    • Fresh cracked black pepper to taste
    • 4 fried eggs optional

    Instructions
     

    • Scrub the turnips and dry them.
    • Poke a few holes in them with a fork or knife.
    • Microwave for 2 1/2 minutes, turn them over, and microwave for an additional 2 1/2 minutes.
    • Remove from the microwave, and allow to cool enough to touch.
    • Remove the skin and cut the turnips into 1/4 inch cubes.
    • In a cast iron skillet, heat the olive oil, or bacon fat, over medium-high heat.
    • Add the turnips, cauliflower, red bell pepper, onion, and garlic, pressing them down evenly with the back of a spoon or spatula.
    • Season with the cayenne pepper, pink salt, and black pepper and cook until the underside is golden brown, about 8 to 10 minutes.
    • Turn the hash with a spatula and press it down again. Cook for an additional 8 to 10 minutes, or until the turnips and cauliflower have turned a golden brown.
    • Taste and adjust seasoning.
    • Serve topped with a fried egg if desired.

    Notes

    I have made this without turnips too. Just use two small heads of cauliflower.
