Here I am, back with another sheet pan meal. I told you that I am obsessed with them, and I wasn't joking. I have literally been trying to turn just about every recipe into a sheet pan recipe. 


Well, because they are so dang easy, and so easy to clean up after. Plus, this Sheet Pan Steak Fajitas recipe plays right into my comfort zone with Mexican flavors.....YUMMM!!

The whole fam is actually on board with the sheet pan dealio. I tell myself it is because my recipes are so good, which I am sure that is part of it, but I am pretty sure one of the things really love is the whole one pan plan part. That way whoever gets stuck with the dishes is in and out of the kitchen in no time. 

I think they are getting spoiled! 

I need to spend a whole day cooking so they can remember what it is like when Mom uses every single pot in the house 

They grumbled and mumbled last weekend and I only made 2 breakfast recipes in one day. I mean sheesh people, y'all are gettin' fed here!

But I do know one of the reasons behind the excitement for this was the fact that is is Mexican! As I look back over the last few weeks, I realize that I have been seriously neglecting our obsession love of Mexican food. 

You know it has been a long time when the kiddo wants to drive all the way to Tacoma to get a take out burrito! 

Shame on me!!

If you search Mexican on the blog you will come up with a butt ton of recipes! My Southern California roots run deep. So hopefully, with the grilling season coming to an end, or lull at least, I will be able to get some new Mexicany goodness on the blog.

Jessi has been begging me to make surf and turf burritos again (I made them waaaaaaay back in the day). I am thinking of working on a new twist to that old recipe. 

I wonder if I could make it a sheet pan meal *giggle*

Sheet Pan Steak Fajitas

Sheet Pan Steak Fajitas

Fajitas don't have to take a long time, or a ton of dishes. Just marinate your meat, toss your ingredients on a sheet pan, and you are eating in no time flat!


  • 2 teaspoons New Mexicored chile powder
  • 2 teaspoons cumin
  • 1 teaspoon paprika
  • 1 teaspoon Mexican oregano
  • 1 teaspoon garlic powder
  • 1 teaspoon coriander
  • Kosher salt
  • Fresh cracked black pepper
  • 1/4 cup olive oil
  • 1 lime, juiced
  • 1 (1 1/2-pound) flat iron steak
  • 2 bell peppers (I used red and yellow) sliced
  • 1 large onion, cut into 1/4 inch slices
  • Greek yogurt, cilantro, lime wedges for serving

Equipment Used


  1. Place seasonings in a large zip top bag, add the oil and lime juice. Shake the bag to make sure everything is combined. Add the steak, peppers, and onion to the bag. Seal the bag and shake to make sure everything is coated. Refrigerate for at least 1 hour, or overnight.
  2. Preheat oven to 375 degrees.
  3. Remove the meat and vegetables from the bag with tongs. Arrange in a single layer on a baking sheet and discard the marinade. Roast the fajita mixture in the oven for 20-25 minutes until an instant-read thermometer inserted horizontally into center of meat registers 125 degrees.
  4. Serve with tortillas and top with chopped cilantro, Greek yogurt (or sour cream), and extra lime juice, if desired.
Yield: 4 servings
Prep Time: 01 hrs. 15 mins.
Cook time: 00 hrs. 25 mins.
Total time: 1 hrs. 40 mins.
