So, November has begun. Countdown to Turkey Day, and Christmas. Are you ready? I know I am not even close! It has just snuck up and caught me completely off guard.

How does that happen really?


I mean I know how to read a calendar. I know there are 12 months in a year. I know how many days are in a month.

But noooooope. Once October gets here I am rendered completely incapable of any concept of time. 

At least it seems that way.

So, how do I combat the overwhelming stress of being horribly behind in any and all holiday planning?

I bake brownies of course!

There is just something calming about a warm, just out of the oven brownie, with a tall glass of ice cold milk right? And these are the best damn brownies I have ever had!

Cakey AND gooey, they balance the best of both worlds for an epic chocolate adventure for your mouth. And I don't know about you, but if my mouth is happy, pretty much the rest of me follows right along!

Of course I always crave sweets this time of the year. 

It is funny, I don't really have much of a sweet tooth. But once Halloween hits it is like my body gets possessed and all I can seem to think of is candy.....and cake....and fudge........Oh My!!

Uhhh I don't think it is bathing suit season anymore Toto!!

Thank goodness right? We don't need to think about that kind of thing.

Not when we have a big plate of these brownies in front of us!!

These brownies are cakey and gooey all at the same time, which pretty much makes the the best brownies ever!

Ingredients

  • 3/4 cup cocoa powder
  • 1/2 teaspoon baking soda
  • 2/3 cup butter, melted
  • 1/2 cup boiling water
  • 2 cups sugar
  • 2 large eggs
  • 1 teaspoon pure vanilla extract
  • 1/2 teaspoon salt
  • 1 1/3 cup flour
  • 1 cup chopped milk chocolate chips

Equipment Used

Instructions

  1. Preheat oven to 350°F.
  2. Grease a 9 x 13" baking dish and set aside.
  3. In a large mixing bowl, stir together the cocoa and baking soda. Stir in the melted butter until smooth. Add the sugar, eggs , vanilla and salt and combine well. Stir in the boiling water until the mixture is smooth and thick.
  4. Toss the chocolate with the flour, add to the wet ingredients, and stir until just combined.
  5. Spread the batter into your prepared baking dish and scatter your caramel "chips" across the top. Bake for 35-40 minutes, or until the edges start to pull away from the pan.
  6. Cool completely in the pan.
Prep Time: 00 hrs. 10 mins.
Cook time: 00 hrs. 35 mins.
Total time: 45 mins.
