Well my friends, I am finally back to the land of the living  

No more kleenex and Nyquil for me  and I am not banished to sofa land with my jammies and fluffy blankie. OK, maybe I am still in my jammies, but that is just because they are so ding dang comfy, and hey, it is the weekend right? Why should I have to get dressed?

Now that my head is somewhat clear, my planning has begun for my game day menu. Yes, I know my Seahawks are not in it this year  but it is still a big deal for me.

Oh boy! Did you get hit by that crazy snow storm? Things here in Washington are chilly, and wet, but I will not complain because at least I can get around! We even had a bonfire Saturday night. Had a few friends over, some good food, and lots of laughs.

Then Sunday came around, and the fun stopped.

You see, last Friday I watched the G-baby, like I do every Friday, but she was sick. I mean like sick sick, coughing, sneezing, boogy face . The poor little thing was so miserable. She would start to play, and have a smile on her face, then all of a sudden start crying. I kept telling her that I wished I knew what she was feeling so I could try to make it all better.

You know when they say "be careful what you wish for because it might come true"?

He worked nights for a couple of years, so we didn't get to spend time together very often. Then I got so wrapped up in trying to improve the blog for y'all that it seemed like I was alllllllways working, and had no time for anything else.

Then my son and his fiance got pregnant and we all wanted to focus on their little one coming.

How the weather where you are at?

Winter's icy breath is breathing down my dang neck   and I have seriously been freezing my booty off!

It has been in the 30's and 40's, and my fireplace  has been cranking overtime, trying to heat the house to a temp that doesn't leave my toes and nose bright blue!

So of course I have been craving huge bowls of steaming hot soup, stew, or chili, and all of the carbs that I can possibly cram into my body!

Boy am I happy Wednesday is over!!

You see, one of the things I decided I was going to do this January was try to get healthier. I know, how original right?

One of the changes I made was to switch from coffee with creamer, to green tea. There are a lot of health benefits from green tea, so I thought it would be a good choice for me. I already had a box of green tea in my cupboard so, for the last couple of weeks, that is what I have been drinking in the AM.

My routine was, two tea bags in a huge, I mean HUGE mug (I use it for a soup mug and it fits and entire can of Progresso soup), fill with water, and zap it in the microwave for 3 minutes. Then, as I drank it, I would just add more water, heat it up, and keep going. I was drinking about 3 or 4 of those big mugs every morning, then I switch to water.

I ran out and asked Kevin to pick some more tea up on his way home from work. When he got home he asked me if he was supposed to buy decaf.

Ummmm decaf? I never drink decaf.

Then he pointed out that the old box said decaffeinated on it 

Oh well, I have had decaffeinated coffee before, and to me there really wasn't that much of a difference. Of course we make our coffee on the weaker side, but no biggie right?

I got up yesterday, and went through my whole routine. Tea, breakfast, work, work, work. Until I got 3/4ths of the way through the second mug

BAM! I started shaking, my heart was racing, I felt nauseous, and like I was going to faint. Thanks goodness Kevin had stayed home from work because I was a mess. I was recipe testing, and he ended up having to do all of the prep for me because there was no way I trusted myself with a knife  (my trip to the ER for 6 stitches from my run in with the mandolin has me very wary)!

Since he was on his own for food, Kevin popped some tater tots into the oven. Once they were done, he made me eat a few just to get something into my tummy, but I didn't start to feel better until about 6PM last night.

I still have a bit of a headache today, but I am much MUCH better.

So, I guess green tea and I do NOT make a good match ! It is back to it's decaf brother I go ASAP!

Anywhoo, let's get onto these crackers. A friend of mine sent me a recipe for crackers that were similar to these, but, with my "let's eat healthier attitude", I decided I wanted to tinker around with making them with different kinds of flour. I tried regular all-purpose, white whole wheat, regular whole wheat, and quinoa flour.

The results?

Well, the 100% quinoa was a no-go, that could have been cook's error by not rolling them out as thin as they should be, but they just seemed a bit gummy to me.

So I tried 50/50 all-purpose flour with both white wheat, and regular whole wheat. Both were great. I also did 100% white whole wheat, and 100% regular whole wheat. The regular whole wheat had a nuttier flavor, which I really enjoyed, but they were both tasty as well. Of course you could do 100% all-purpose flour, but remember, I was trying to get my "healthy" on 

Bottom line is, these crackers kind of remind me of my fave everything bagels, another things I have sworn off, at least for a little while  between the onion, and the seeds. The herbs just take them over the top for me! I could eat these every day!


Well let's just say that he loved them too, but asked me to give the crackers a rest for a bit

  • 1 cup all-purpose flour
  • 1 cup whole wheat flour 
  • 3 tablespoons room temperature butter, cubed
  • 1 teaspoon kosher salt
  • 1/2 medium yellow onion, grated (about 3 tablespoons)
  • 1 tablespoon fresh thyme leaves, chopped
  • 1 tablespoon fresh sage leaves, chopped
  • 1 tablespoon fresh rosemary leaves, chopped
  • 1/2 cup milk
  • 1 egg white, beaten
  • Toasted sesame seeds
  • Poppy seeds
  • Sea salt


  1. Preheat oven to 450 degrees F.
  2. Combine the all-purpose flour, whole-wheat flour, butter and salt in a stand mixer. Mix on medium-low speed until the mixture resembles a coarse meal. Add the onion, herbs and milk and mix until just combined. Do not overwork the dough.
  3. Remove dough from the mixing bowl, form into a ball, and cut in half. Cover one half with plastic wrap and place it in the fridge.
  4. On a counter, or cutting board, roll out the other half of dough into a 1/8-inch-thick rectangle on lightly floured parchment paper. Brush the top with egg wash and sprinkle with the seeds and sea salt.
  5. Transfer the dough and parchment to a baking sheet and cut into 1-by-2-inch rectangles.
  6. Bake 10 to 12 minutes, or until golden and crispy.
  7. Repeat with the second half of the dough.
Yield: Approx 64 crackers
Prep Time: 00 hrs. 15 mins.
Cook time: 00 hrs. 10 mins.
Total time: 25 mins.

Soooooo we made it to the playoffs again this year  *woot* *woot*

In my house we look forward to football season almost as much as Christmas! One look at our living room, and you can tell that we are die hard Seahawks fans. Flags, blankets, all that good stuff. My wardrobe consists of about 10 or 12 different Seahawk hoodies and shirts. You will never catch me on a Friday or Sunday without my gear on, and our way of saying goodbye is "Go Hawks"  

We have already started the G-baby down that road. The first thing we bought her was a Seahawks bib and little Seahawks shoes. I have been trying to teach her to say Nana and then Go Hawks!!

How are you this fine Tuesday AM..errrrrr PM.....errr is it Tuesday where you are? The whole time thingy gets me all confused. Are you 3 hours ahead, 1 hour behind, am I standing on my head?  #blond

Sorry if I seem even weirder than usual today. I woke up at midnight yesterday with the migraine from hell!   I can't remember the last time I had a migraine that confined me to a room, with the blinds closed, for 24 hours. So today ,I am up and running and raring to go! I feel like I could cook 4 meals, clean the house, and do the laundry. 

However, the only things I have seemed to accomplish is breakfast, watching the first episode of this season of The Batchelor #dontjudge  And writing this post.
