My friends, today I am coming to you directly from my living room sofa, in my pjs, bundled up in a blanket with my laptop on my errrrr well on my lap. Tissues close by, a glass of water, and a big ol' pouty face 


I.HATE.BEING.SICK.

I am used to being the one that takes care of everyone else. Making scrambled eggs and toast, or chicken soup, bringing them saltines, water, or 7up. I like being the one that does the care taking, not so thrilled when I need to be taken care of.

Before I caught the creeping crud, I had been craving fish. Well, salmon mostly, but cod or sea bass would  have done nicely too. Actually I did pick up some sea bass fillets, but we are going to talk about the deliciousness that is this salmon.

I was so excited when I saw these lovely salmon fillets staring up at me from the fish counter. I asked the butcher for 4 of them and happily stashed them in my shopping cart.

Kevin asked me what I was planning on doing with them. I shrugged and said "I dunno. Cook them?"

Ya, that comment earned me "the look" haha so I can be a bit of a smart ass at times. Ya still gotta love me

I knew I had some pesto in the freezer, and a pint of grape tomatoes on my counter that were meant for a salad that just hadn't found it's way to my salad bowl yet. So I formulated a plan of attack, grabbed some asparagus because it was the thin yummy spears I love, and off to the house we went.

I still wouldn't tell Kevin what I was planning on doing. Mainly because every time I even say the word "pesto" he immediately says, "I don't like pesto". Even though he has told me, on more than one occasion, that it is the store bought pesto he doesn't like and that, in fact, he likes my homemade version. But he lovvvvvves to give me a hard time #painintheass

I know many of you have said that you love my sheet pan meals, so I figured I would go there again. I also wanted to use as few ingredients as possible, something else many of you have asked for. So this meal only uses 6, 7 if you choose to garnish, minus the olive oil, salt, and pepper.

Sometimes I really think the simpler the recipe, the better it tastes. I mean, don't get me wrong, I love my bolognese, which has quite a few ingredients, as well as my slow cooker chicken enchilada quinoa, and of course there is always mole sauce. I have yet to master that. It has a ton of ingredients but  it tastes so goooooood!

Anywho, what about this sheet pan meal?

Well, I can only sum it up with one word.

OhhhhEmmmmGeeeeeee

OK that's not a word, but it is the best way I know how to convey to you how good this really was.

It was simple, and delicious.

Oh, and what did Mr Complainsalot have to say about it?

I brought him his plate, he took a few bites, and then he said, "WOW this is really good!".

*facepalm* that man drives me absolutely crazy!!

Sheet Pan Pesto Salmon with Asparagus and Tomatoes

Sheet Pan Pesto Salmon with Asparagus and Tomatoes

This supper is quick, and easy, but doesn't scrimp on taste. A perfect weekday supper the whole family will love.

Ingredients

  • 1 bunch asparagus
  • 1 cup grape tomatoes
  • 3 cloves garlic, minced
  • 2 tablespoons olive oil
  • Kosher salt
  • Fresh cracked black pepper
  • 4 (6-ounce) salmon fillets
  • 1/2 cup plain Greek yogurt (recommend Greek Gods)
  • 2 tablespoons pesto (homemade or store bought)
  • Grated Parmesan cheese
  • 6 basil leaves, cut in chiffonade (optional)

Equipment Used

Instructions

  1. Preheat oven to 450 degrees F.
  2. Trim the woody ends from the asparagus, and cut the tomatoes in half. Scatter them onto the baking sheet, along with the garlic, and drizzle with the olive oil, then salt, and pepper. Toss with your hands, or tongs, to combine. Spread into a payer.
  3. Nestle the salmon fillets in with the asparagus and tomatoes, sprinkle with salt and pepper.
  4. Combine the pesto and Greek yogurt together, divide among the salmon fillets, and spread evenly.
  5. Bake for 15-20 minutes or until desired doneness, checking the cook time at the 10-12 minute mark.
Yield: 4 servings
Prep Time: 00 hrs. 10 mins.
Cook time: 00 hrs. 15 mins.
Total time: 25 mins.

  8. Why do your instructions talk about pasta and making a rue? Is that the side you served with the salmon? If so what are the measurements you used and what kinds of cheeses?
