Aahhhh today has been one of those days, and it's not over yet *sigh*

Ever have one of those days, when you have so many things planned but none of them go right? Ya, my day, thank you!


I have sooooo much work I need to get done, but for the last few days my WiFi has been playing hide and go seek with me 

I called my cable company and got the run around for a while. Then someone did some voodoo from their end and WALA my computer connected. I hung up, breathed a sigh of relief, and got down to do some work. But, once I got through my email, the WiFi decided to take a coffee break...over....and over.....again!

I need to call the cable company and have them come bring me a new modem, I am just dreading going through the whole conversation again because you can't just tell them what has already happened. Oh no, they have to go through the whole rain dance again. #ineedadrink

So, I am blaming the cable company for me bringing you this decadent, uber cheesy, pot o' pasta instead of the nice healthy Salmon Quinoa Patties I had planned to share.

Don't get me wrong, those salmon patties are the bomb, but today's stress level was just screaming for some pasta and cheese. It is my happy place, and Momma needs to feel happy!

My daughter is probably ecstatic right now, because she loved this mac and cheese. 

I had it in my recipes to make list for the last 3 weeks, but just never seemed to get around to making it. So, just about everyday, she would ask me "When are you making the white mac and cheese?".

All I would say is soon. Isn't that what we parents say to our kids when we want them to shut up, but don't really have an answer? Ya, she pointed that out to me. It doesn't work as well on a 25 year old as it does on a 5 year old.

So, I finally make it, she is over the moon excited and scarfs down a big bowl. Then, when she looks for leftovers the next day? Oops, Kevin to them.....ALL.....for lunch.

She was not a happy camper in any way, shape, or form. 

I tapped out. 

This was a Dad/Kid thing!

Now she is asking me again, "When are you going to make the white mac and cheese".

I have an answer for her this time.

"The recipe is on the blog. Will you be making dinner tonight?"

Any bets on whether she makes dinner, or we order pizza?

Stove Top White Mac and Cheese

Stove Top White Mac and Cheese

This mac and cheese is uber cheesy, only uses one pot, and is done in no time flat. Who needs a box when you can have this?

Ingredients

  • 3 tablespoons butter
  • 3 tablespoons all-purpose flour
  • 2 cups milk, warmed
  • 2 1/2 cup chicken or vegetable stock
  • 1 tablespoon fresh thyme, chopped
  • 1/2 teaspoon ground white pepper
  • 1/2 teaspoon mustard powder
  • 1 teaspoon onion powder
  • 1/8 teaspoon cayenne pepper
  • Fresh ground nutmeg to taste
  • 12 ounces elbow macaroni
  • 8 ounces white American cheese, shredded or diced
  • 8 ounces extra sharp white cheddar, shredded
  • 1/2 cup Parmesan cheese, grated
  • Kosher salt

Equipment Used

Instructions

  1. In a large pot, over medium heat, melt the butter. Whisk in the flour and cook until golden brown, about 2 minutes.
  2. Slowly whisk in the milk and stock. Add the thyme, white pepper, mustard powder, onion powder, cayenne, and nutmeg. Stir in the pasta. Bring to a boil, then reduce to a simmer, cooking for about 10 minutes, or when the pasta is tender, stirring occasionally to keep the pasta from sticking.
  3. Remove from the heat and stir in the cheeses.
  4. Taste and add salt and pepper if needed. Top with more fresh thyme if wanted.
Yield: 4 to 6 servings
Prep Time: 00 hrs. 10 mins.
Cook time: 00 hrs. 12 mins.
Total time: 22 mins.
