Today I seem to have come down with some sort of a bug 

I thought I was done with the whole cold/flu thing since I got that horrible crud that left you with the cough from hell for days, twice, yes I caught that twice. Lucky me *eyeroll*


But hadn't had anything that affected my tummy.

Until now 

Yesterday I felt kinda blah, thought it might be the weather (hello life in the Pacific Northwest), but as the night went on it started getting worse. Let's just say that I am super happy that my scrambled eggs stayed down this morning!

I know you are probably asking yourself why in the heck I would be talking about being sick to my stomach while I am showing you my newest creation.

Good question!

Well it is because, even with an upset stomach, this One Pot Chicken Fettuccine Alfredo still looks and sounds good to me!

Now, that has to tell ya something doesn't it?

But it tastes great, is easy to make, with very little clean up. Quick, easy, no cleanup?

I don't know why it took me so damn long to give this a try. I mean I have several one pot/one pan recipes here, a few 30 minutes or less ones, and I already make a lightened up Alfredo sauce. So why I never put the two of them together is beyond me.

Then I saw a pin on Pinterest that led me to a blog called Yup It's Vegan.

Kinda weird that I took a vegan recipe and made it SO non vegan, but I liked the way it looked and knew it would be good.

What I wasn't prepared for was how much the rest of the gang would love it. This makes 4 servings and I guess I should have doubled it because they hoovered it down so fast I wondered if they even made a positive ID check to see what it was!

I was SO happy I had already gotten my bowl because it was seriously gone in like 0.2 seconds!

So, if you are looking for a terrific weekday recipe that has zero stress, and the whole family will love, you have come to the right place!

One Pot Chicken Fettuccine Alfredo

One Pot Chicken Fettuccine Alfredo

Chicken Alfredo has never been better because this one has less calories, cooks up in less that 30 minutes, and is done in one pot!

Ingredients

  • 4 strips thick cut bacon, chopped
  • 1 pound boneless skinless chicken thighs, cut into bite sized pieces
  • 4 cloves garlic, minced
  • Kosher salt
  • Fresh cracked black pepper
  • 1 cups chicken stock
  • 1 1/2 cups 2% milk
  • 8 ounces fettuccini
  • 1 head of broccoli, cut into florets
  • 1/2 cup grated Parmesan cheese

Instructions

  1. Fry the bacon in a large skillet over medium-high heat until crispy. Remove with a slotted spoon to a paper towel line plate and reserve.
  2. Add the chicken and cook until no pink remains. Add the garlic and cook for another minute or 2. Season with, salt and pepper.
  3. Pour in the chicken stock and milk, stir, and bring to a low boil. Reduce heat immediately to simmer and add the pasta.
  4. Stir occasionally for 4 to 5 minutes, or until the pasta just begins to soften. Add in the broccoli, stir and cover with a lid. Continue to cook, stirring occasionally, until the pasta is cooked, about another 7 minutes.
  5. Add the Parmesan cheese and mix well. Top with the reserved cooked bacon.
  6. The sauce will continue to thicken as it stands. Add more milk if needed.
Yield: 4 servings
Prep Time: 00 hrs. 10 mins.
Cook time: 00 hrs. 12 mins.
Total time: 22 mins.
