Here I am, back with another sheet pan meal. I can't help it, I am addicted to them. As I feel right now, I could throw everything but my sheet pans and slow cookers away and I would be fine.

OK, maybe that is a bit of a stretch, but you could hide everything way back in the back of my pantry and could pretend 


Actually that scenario might be about to happen, to a certain extent. We are getting ready to move to a MUCH smaller house next month *sigh* and I don't do good when it comes to getting rid of things. Oh, I am not a hoarder, or anything like that, but I have certain things that I just can't part with.

In my defense, we moved from a 2800 sqft house to this 1600 sqft one. I did a really good job downsizing, and was able to get rid of a lot of things. But, the house we are going to now? I think it is more like 1000 to 1100 sqft? YIKES!

I am happy we are moving, don't get me wrong. We will own our home, no more rent down the drain! But, this house has been perfect for my blogging. It has a small dark kitchen, which was not helpful, but I had a nice big room for my office/photography studio.

I am just not real sure how it will work in the new place.

Kevin was talking about how nice it will be to be able to do whatever we want to the place, which of course you know that got my wheels turning.

Could we extend the deck in the back?

Ummm I guess so, why?

Well, that way we can put a sliding glass door into the kitchen/dining area so I will get more natural light!

I batted my eyes and gave him the angel smile when I said that last bit.

I guess I should keep my list of things I want to do/change hidden for a while huh?

I know it will take some time to adjust to the new digs. I will miss my deer , being close to the beach, and living in a quiet neighborhood with trees all around.

But I won't miss the deer eating my roses and tearing up my front yard, we will be living right next to a park and a lake, and it is Washington, you can't go too far without running into a tree....or 12!

The other night we were arguing about discussing, the color we want to paint the house. I have always wanted a yellow house. Not like sunshine yellow, but a nice muted yellow. It just seems bright and cheery to me.

*sigh* in the meantime, we can find things we both agree on, like these Cajun Pork Chops and Veggies.

Sheet Pan Cajun Pork Chops

This sheet pan meal is easy to make and full of that Cajun flavor you love. An extra bonus is only ONE pan to clean!
prep time: 5 MINScook time: 40 MINStotal time: 45 mins

ingredients:


  • 1 1/2 pounds baby Yukon gold potatoes
  • 2 tablespoons olive oil, separated
  • 2 tablespoons Creole/Cajun seasoning (Recommended Zatarain's)
  • Kosher salt
  • Fresh cracked black pepper
  • 4 bone-in pork chops
  • 1 large head of broccoli, cut into florets

instructions

  1. Preheat oven to 450°.
  2. Scatter potatoes on the baking sheet and drizzle with 1 tablespoon of olive oil, and season with 1 tablespoon Cajun seasoning. Toss gently to coat and spread them out evenly. Roast the potatoes for 20 minutes.
  3. Season pork chops with salt and pepper and sprinkle a teaspoon of the Cajun seasoning on each of them.
  4. Place the broccoli florets in a medium bowl and toss with 1 tablespoon olive oil. Season with salt and pepper to taste.
  5. Remove baking sheet from the oven and place the pork chops and broccoli florets.
  6. Return the baking sheet to the oven and roast until the pork is completely cooked through, reaching an internal temperature of 140 degrees F, about 15-20 minutes.* see cook's note
