Chocolate Chip Banana Bread Cheesecake

Well, just a little. 

I took my chocolate chip banana bread and topped it with a creamy no-bake cheesecake. 

Heaven!!!

I have to admit when I was planning out my menu for the week baking was nowhere on the horizon. But adorable granddaughter Kylee, aka the G-baby, was sitting on my lap while I was looking online for recipe inspiration. I came across a banana bread/cheesecake hybrid recipe on BuzzFeed and she pointed and said: "That Nana". 

"You want me to make that Ky?"

"Uh-huh" *insert adorable toddler face nodding up and down wildly.

"Ummm Okay". Way to get me out of my comfort zone girl!

But, when I looked at the recipe and knew I could sub my banana bread recipe for theirs, PLUS add some chocolate chips, and the cheesecake was of the no-bake variety? Yup, I was ready to sign up for it. And when I told the family about Miss Kylee's request they were ready too.

I was a tad bit nervous about using my own banana bread recipe because I worried it might be a tad taller, and would the cheesecake fit?

So I popped the banana bread layer into the over, crossed my fingers, and hoped for the best.

What was it my Dad called it?

Oh yes, flying by the seat of my pants.

But my fear was not necessary. Everything fit perfectly in the 9" springform pan I used.

Once I got the cheesecake layer on it was soooooo hard to wait for it to chill enough to eat! It looked so good.

Have I mentioned cheesecake is one of my all time favorite desserts? I just never make it because I have heard that the baked cheesecakes were hard to cook correctly without getting a big crack down the center.

I mean who wants a cake with a crack?

Now that I have discovered this no-bake version? Oh, you can bet there will be a TON of cheesecake comin' out of my kitchen!

Everybody and I mean everrrrrrybody (neighbors, and Kevin's co-workers included), loved this cheesecake!

I believe "bombtastic" was a word thrown around a bit and, when Kevin took some into work, I received a text message telling me how much the boss lady loved it.

My son wants to know when I will be making another one.

I think he will have to take that up with his daughter.

She wants me to make deep fried mac and cheese sticks.

Chocolate Chip Banana Bread Cheesecake

No need to choose between two delicious desserts, this no-bake cheesecake is rich and creamy with a moist, chocolatey banana bread "crust".

prep time: 3 hour and 20 MINScook time: 30 MINStotal time: 3 hours and 50 mins

INGREDIENTS:

INGREDIENTS
  • 2 cups all-purpose flour
  • 3/4 cup granulated sugar, separated
  • 2 teaspoons baking powder
  • 1 teaspoon baking soda
  • 1/4 teaspoon salt
  • 1 cup mini chocolate chips
  • 2 cups bananas (I used 4 small over ripe bananas)
  • 1/2 cup butter, melted
  • 1 1/4 cups milk
  • 2 eggs
  • 32 ounces cream cheese, softened
  • 1 tablespoon vanilla extract
  • 1 tablespoon gelatin powder

INSTRUCTIONS:

  1. Preheat oven to 350 degrees F.
  2. Spray a 9" springform pan with nonstick spray.
  3. In a large bowl, whisk flour, 1/4 cup sugar, baking powder, baking soda, and salt. Add the chocolate chips.
  4. In a separate bowl, combine together bananas, butter, 1/4 cup milk, and eggs; pour over flour mixture and stir just until blended. Do not over mix.
  5. Pour the banana bread batter into the springform pan and bake for 30-40 minutes or until the top is set.
  6. In a large bowl, add the softened cream cheese, remaining 1/2 cup sugar, and vanilla. Whisk until combined.
  7. Microwave the remaining 1 cup milk until hot for about 2 minutes, and add in the gelatin powder.
  8. Quickly stir until gelatin is dissolved, about 5 minutes.
  9. Pour the gelatin mixture over the cream cheese and whisk again until smooth.
  10. Pour the cheesecake mixture over the baked banana bread cover and place in the refrigerator to cool for 3 hours, or overnight.
