Howdy Doody my foodie friends! How are you this fine day? Me? I am in a happy happy mood. The sun has been out for the last several days, not a rain drop in sight (oops I shouldn't say that too loud, I might jinx it!), and Mini Me and I are going to have a girls day out. Movie, and an early dinner. Yay! I love our girlie days.

One of the reasons I love our days, aside from the fact that I love her and always look forward to spending time together, is that we can usually agree on the food we want to eat.

Unlike Kevin and I.

Yes, we are that couple.

Kevin - Are you hungry?

Me - Yes

Kevin - What do you want to eat?

Me - I don't know, what do you want to eat?

(this goes back and forth a few times)

Finally....

Kevin - Just pick a place, we will go where ever you want to go.

Me - How about Mexican?

Kevin - No, I don't want Mexican.

Me - How about pizza?

Kevin - No, I don't want pizza.

Me - How about sushi?

Kevin - No, I don't want sushi.

Me - OK where do you want to eat.

Kevin - Whatever you want.

Me - *facepalm*

With my girlie, I pretty much know that we can agree on Mexican, pizza, sushi, Greek, burgers, pho, etc.etc. The list of yes quite outweighs the list of no.

Thank heavens!! 

Two of them in my life might just drive me over the edge!

The other thing we can always agree on is breakfast. We both love Love LOVE what we call "Mexican breakfast".

Basically, that is a "cheater" huevos rancheros. 

Don't get me wrong, we both love my Huevos Rancheros, and Huevos Rancheros Verdes, but when we are feeling a bit on the lazy side we just put some refried beans between two small flour tortillas, top it with cheese, 2 fried eggs, and some hot sauce and call it good. 

We also love breakfast nachos, which brought me to this deliciousness.

We couldn't choose between breakfast nachos, or huevos rancheros, so I decided to combine them both and WALA Huevos Rancheros Tostadas we born.

When I told her my idea her eyes got all sparkly.

Have I mentioned we both love Mexican food?

Or food.period.

But that look was nothing compared to the look when I plopped a couple of these bad boys down in front of her.

I got sparkles, smiles, oohs, and aahs.

Who needs fancy food when their kid loves simple dishes like these as much as any steak out there?

Now, 

The Complainer?

Ya, not so much.

He will tolerate my Mexican breakfast. I think it is just because he doesn't have to cook.

But that is about as far as it goes.

No sparkles.

No smiles.

I may have to trade him in a new model!

Naaaaa I have him pretty well trained, I don't feel like breaking a new one in

Huevos Rancheros Tostadas

Take a trip south of the border for breakfast with these quick, and easy, Huevos Rancheros Tostadas.
prep time: 10 MINScook time: 5 MINStotal time: 15 mins

INGREDIENTS:

  • 8 Tostada Shells
  • 1 can Bush Beans Cocina Latina Frijoles Negros Machacados (seasoned black beans)
  • 1 cup shredded Mexican blend cheese
  • 8 large eggs
  • 1 cup Roasted Tomatillo Salsa
  • Thinly sliced radish
  • Fresh cilantro, chopped
  • Cacique Queso Fresco cheese, crumbled

INSTRUCTIONS:

  1. Preheat oven to 400 degrees F and lightly spray a baking sheet with cooking spray. Place 4 of the tostada shells on the baking sheet.
  2. Spread about 2 tablespoons of the black beans on each tostada shell, then sprinkle with 2 tablespoons of shredded cheese. Bake 5 minutes, or until cheese is melted.
  3. Meanwhile, lightly coat a large skillet with non-stick spray and heat over medium heat. Carefully crack 4 eggs into the skillet and cook until whites have set and yolk is still runny, 2 to 3 minutes.
  4. Place cooked eggs on top of the hot tostadas, top with the roasted tomatillo salsa, sliced radish, fresh cilantro and queso fresco cheese.
  5. Repeat with the remaining 4 tostada shells and eggs.
