Happy Summer! 

This time of year makes me oh so happy. I mean, of course everyone loves summer, but in in the Pacific Northwest summer is uber special. We have endured months of gray skies, and soaking rain. Then the sun comes out to shine on all of the gorgeous green trees and beautiful flowers that rain has produced. It really is quite breathtaking.

Until it hits the 80's.

That is when we begin to melt.

And complain.

And wish for the rain again.

We can't wait for the summer, then once it gets here we complain that it is too hot.

Or is that just me?

I don't know.

Now, y'all know I am in the "Land of Coffee". You can't walk a block in some areas without tripping over a coffee shop of some sort. 

Oh, I used to be addicted to those places, until I discovered a few treasures at my local Safeway.


I felt like I had died and found coffee heaven!

I knew that I would finally be able to make my favorite cold coffee drink at home but also got the crazy idea to make some popsicles too. I mean why not? It is summertime, right?

I guess it wasn't too crazy though because as soon as Mini Me gave one of these guys a try she proclaimed that they were her new favorite popsicles and that I should make sure to have a batch of them in the freezer at all times.

Seriously?

Pushy much?

I guess I need to teach her how to make them herself.

Good thing they aren't hard to make!

BTDubs, did you know that June is Dairy Month? Yup an entire month to celebrate one of my favorite aisles in my local Safeway!

Why is it one of my favorite aisles?

Well, y'all know that I am about real food. I want to get nutritional, healthy food, that tastes great and is easy to use.


Well, that is the dairy aisle.


I get so much inspiration just walking down the aisle.

Like this trip.

I saw the Almond Breeze Almondmilk and thought about making some Almond Joy Overnight Oats. Almond Joy is Kevin's favorite candy bar, so how cool would it be to surprise him with a breakfast that tastes like his favorite candy? Almond Breeze Almondmilk would be perfect for that!


Good ol' Philly Cream Cheese (or as others call it, Philadelphia Cream Cheese).

It's not just for bagels anymore!

You can use it in everything from pasta sauces, to help give them that extra little bit of creaminess, to desserts like my Chocolate Chip Banana Bread Cheesecake

I have been dying to make mini cheesecakes, hopefully this month they will happen.


Another crazy idea I had while walking down the dairy aisle?

Everyone has Mozzarella Sticks, how about Cheddar Cheese Sticks? Maybe even a lighter version that is baked, not fried? There has to be a way to do it with Frigo Cheese Heads cheddar sticks, and I am going to figure it out!

Caramel Macchiato Popsicles

It's summertime, so why not turn your favorite coffee into a cool, delicious popsicle?

INGREDIENTS:


INSTRUCTIONS


  1. Fill each of the popsicle molds 1/4th to 1/3rd of the way with the International Delight Caramel Macchiato Creamer. Freeze for an hour.
  2. Lightly mix STōK Cold Brew Coffee with more of the International Delight Caramel Macchiato Creamer. Top off each popsicle mold with the coffee mixture, cover with the lids and place the sticks in the molds.
  3. Freeze until solid.
Cook's Notes
  1. The amount of each ingredient depends on the popsicle molds you use.
