We are enjoying some beautiful weather here in Western Washington. I mean like high 80's beautiful weather. We had the pool out for the baby, took her to the park, this little girl loves to be outside!


It has been a hit and miss Spring/early Summer. Last year this time we had been having record temps by this time. It was the hottest June ever.

This year?

Rain, rain, and more rain.

I was starting to think we are never going to have a summer!

But the last few days have proven me wrong and I am ever so happy!

So, I was faced with what kind of side dishes did I need to have in the fridge to combat the heat AND complement everything we are grilling.

We, of course, have had potato salads, macaroni salads, bean salads, etc. But something cold, and sweet, just sounded SO good.

I did make some No Churn Peach Frozen Yogurt. Which disappeared in about 6 seconds flat! But I was still craving something else. Once I walked through the farmer's market I knew exactly what I wanted.

Fruit.

And LOTS of it!

I started grabbing this, and that, and realized I wasn't going to be able to put everything into one salad. I mean fruit is good, but you don't want to overdo it right? I just kept the extra to nibble on here and there.

So, what did the family think?

Well, the G-baby had to pick each and every type of fruit out, ask me what it was, then had me try it. I guess she thinks she needs a royal taster now.

Well, she is the princess.

Everyone else?

Yup, they loved it. But really, what isn't there to love about a big ol' bowl full of fruit with some honey and lime?

Nuthin!

Bonus? If you don't eat all of the fruit salad with your BBQ you have a delicious breakfast waiting for you the next day. Just a little bit of Greek yogurt, with a big scoop of fruit salad and granola, and WALA you wake up to serious deliciousness!

Now that is the way I like to say "Good Morning".

Rainbow Fruit Salad

Celebrate the flavors of summer with this fruit salad. Eating the rainbow never tasted better.

INGREDIENTS:

For the Salad
  • 1 lb fresh strawberries, chopped
  • 1 (20-ounce) can pineapple chunks, drained
  • 12 oz fresh blueberries
  • 1 lb red grapes, halved
  • 1 (15-ounce) can mandarin oranges, drained
For the Dressing
  • 1/4 cup honey
  • 2 limes, zested and juiced
  • 2 tablespoons fresh mint leaves, chopped

INSTRUCTIONS


  1. Add all of the fruit to a large mixing bowl.
  2. In a small mixing bowl, whisk together they honey, lime zest, lime juice and mint.
  3. Pour the dressing over the fruit and toss well.
