I have been in such a good mood lately!

The weather has been amazeballs here in my little corner of Western Washington. With it being gray and rainy, 8+ months a year, it is time to throw a party when you have days on days of gorgeous sunshiny weather.

I just want to stay outside all day.

I have become that old lady person that sits on the front porch with a cup of coffee, or iced tea, and waves at all of the people that walk by and I live on the corner of a busy block since there is a park right next to our house. So I am a wavin' fool! I have even gotten the neighborhood teenagers to wave!

We are supposed to have rain, for the first time in what feels like weeks, today. I will believe it when I see it though. As I write this I am looking out my front window and see blue skies with white puffy clouds and nothing but sunshine. Like I am seriously having a hard time not grabbing the dogs and going for a walk it is so pretty. 

Ha, just as I wrote that Rocky picked up his head and looked at me like "Outside Mom?".

Oh they are so spoiled!

I have zero clue what I am going to do when the rain comes back. I am not uber keen on the whole "Let's go for a walk in the rain" dealio. I never have been. You would think that, after living in WA for 11 years, I would be down with it, but NOPE not so much.

It also seems that the dogs and the G-baby have been sharing notes. 

Yesterday, while Kylee was here, this is what I heard every 10 minutes until I gave in.

Outside?

Outside Nana?

We go outside?

Yes, yes, we go outside.

Then she asked the important question.

Dog poop?

Haha this is not a dumb girl people. At 2 years old she knows that we have 2 dogs that need to relieve themselves somewhere and she does not want to be the one to find that landmine! She wants to play but is comfy hanging back on the deck while Nana handles the dirty business. 

Ahhh the joy of being a dog Mommy *sigh*

Uhh OK, let's get off the dooky duty talk, and on to something a bit nicer, like these Salmon BLTs.

OhhEmmGeee people!

Y'all know that I was NOT on the salmon bandwagon when I moved to the PNW.

Like I couldn't stand the stuff!

But, I soon found, that you are not allowed to be a card carrying Washingtonian if you don't like salmon. 

Thank goodness I finally had some good salmon (not the crap that I tried in San Diego) and fell in love with it. If not I might have just been escorted out of the state!

But, the catch 22 in falling in love with salmon is that, when it is in season, that seems to be all I really want to eat.

Kevin (at the grocery store) - What sounds good for dinner? 

Me - Salmon

Kevin - I just want to throw something on the grill

Me - Salmon

Kevin - Just something quick and easy

Me - *insert "DUH" face*

Kevin - I will grab some salmon

So I am currently trying to incorporate salmon into just about anything we eat. Hence these deeeeelicious Salmon BLTs with Creamy Lemon Dill Sauce. Kevin (or course) didn't seem like he was totally on board with this whole idea when I first mentioned it to him.

Shocker right?

But, once I brought him one of those gorgeous sandwiches, how could he not agree that this was a genius idea?

He couldn't, that's how.

And Mini Me was all but doing backflips for them!

Even the G-baby was down with the idea. 

Ahhhh family. I love it when we all come together!!

Salmon BLTs

Give your BLTs an upgrade with the addition of a pan seared salmon fillet and creamy lemon dill sauce.
prep time: 5 MINScook time: 7 MINStotal time: 12 mins

INGREDIENTS:


  • 4 (4 to 6-ounce) salmon fillets
  • Kosher salt
  • Fresh cracked black pepper
  • 1/2 cup Greek yogurt
  • 1 tablespoon fresh dill, chopped
  • 1 lemon, zested
  • 8 slices of bread
  • 4 romaine lettuce leaves
  • 2 medium tomatoes, sliced
  • 8 slices bacon, cooked

INSTRUCTIONS


  1. Sprinkle the salmon fillets generously with salt and pepper.
  2. Coat the bottom of a large, heavy-bottomed pan with olive oil and place over medium-high heat. Once the oil is hot and the butter is melted, add the salmon fillets, skin side down. Cook, without moving until the sides are cooked just past halfway up the fillets. Flip and cook, without moving, until the sides are fully cooked, then remove from the heat for medium-rare
  3. Meanwhile, in a small mixing bowl, mix together the Greek yogurt, fresh dill, and lemon zest. Combine well and set aside.
  4. Toast the bread slices and spread lemon-dill mixture on 1 side of 4 of the toasted bread slices. Place 1 lettuce leaf, 2 tomato slices, 1 salmon fillet, 2 pieces of bacon on the other bread slices.
