Weekly Meal Plan #4

Well, we are already at one month of menus. I hope you are enjoying them! 

I know how much easier my life is when I plan ahead for the week. No last minute decisions to make, shopping is done with one trip, one less thing to stress about right?

This week I am sharing a few of my personal favorites. Monday's bolognese is sooooo luxurious! I seriously have to have it once a month or I get cranky.

Tuesday is a blast from the past. Before I developed my allergy to avocados (I know, it is so sad, I miss them so much ), these enchiladas were requested by the fam over and over again.

Wednesday is one that I developed over the summer. I love pesto, I love pork, and I love to grill. So those loves all came together in this deliciousness. If you don't have a grill, or you can't get outside to grill, you can use a grill pan, or even a cast iron skillet. However you do it, do it because it is delish, and the kiddos will love it!

Thursday is one of my favorite meatless meals. This soup is rich, and hearty, and oh so good! Don't let the word curry scare you. It really isn't spicy. Plus you could add or reduce the amount of curry paste you add to dial it in perfect for your family.

Friday is a family fave for fish AND healthy. Salmon is my favorite fish (along with halibut) and I could eat it a couple times a week if it was up to me. This is the way my kids love to cook it because it is so uber easy.

Saturday is of course date night, or leftover night, either is fun for me. My Mom used to call leftover night "Grab it and growl" because you had to be quick to grab whatever you wanted before someone else did 

Sunday is another of the ways I used to sneak healthy stuff in with my kids. Now they love spinach but, when they were little, not so much. This casserole has creamy sauce, with pasta and chicken. How can you go wrong with that?

Your side dish this week would go perfect with just about anything, but I picked it to go along with the pesto stuffed pork loin, and the breakfast is my #1 favorite breakfast ever, well maybe that and eggs benny.

Dessert is our Halloween treat. They are fun to make, super cute, and taste SO good. Whip up a batch (or 2) for your guys and ghouls
